7.9% SPONTANEOUSLY FERMENTED SOUR WITH CLEMENTINE - a blend of golden sours brewed in the fall of 2018 & 2019, that were transferred in our outdoor coolship, where they cooled overnight in open air while capturing ambient microflora. The following morning, the inoculated beers were transferred into a selection of French oak wine barrels to spontaneously ferment. After 5 years of monitoring and tasting, we selected these barrels to blend before re-fermenting with 400lbs of fresh peeled clementines from our friends at Norden Aquavit
