Abel Tasman National Park is located at the northernmost section of the southern island of New Zealand. During a not-so-long-ago trip to NZ, we were captivated by the park’s awe-inspiring beauty. While there, we spent crucial time selecting the best hops NZ has to offer. This 100% NZ hopped pilsner is the result of that time and inspiration. Crisp and clear with pleasing aromatics from Wai-iti, Nelson, Riwaka, NZ Cascade, Motueka. 5.2%

What happens when you cross our two of our favorite pale ales, Mt. Nelson and Dobis? You get Pineapple Peak! Citra and Nelson Sauvin hops are together at last in a supremely aromatic and flavorful, but always easy drinking, pale ale. Tangerine, pineapple and tangy ganja aromas are followed by pithy lemon peel and a Kerns nectar like juicy finish. 5.7%

This IPA is totally out of this world! Hiding inside your glass is a massive amount of Galaxy & a cosmic dusting of Simcoe, Mosaic & Centennial. This exploration in flavor reminds us of a day trip to Melmac, a different world with a green sky, blue grass & a purple sun. This should quench your vast appetite for hop forward flavors… and beyond! 6.8%

This brand new West Coast IPA seriously rips from terpene rich hops. Simcoe, Mosaic Cryo, experimental HBC 586 and Centennial hops brings waves on waves of meyer lemon, mango flesh and pine wood forest aromas followed by the sturdy West Coast bitterness we all know and love – all in a reasonable 6.3% ABV package meant for heavy dosing. Don’t slip on the drip!

When we first brewed this Hazy Double IPA years ago we had a lot of explaining to do. A lot of people were put off by the deep haze of this beer, the soft and chewy body and the wild tropical fruit aromas from modern hops and expressive yeast. The original description even had a tongue-in-cheek declaration that we are “just kids doing kid stuff!” We didn’t let the detractors get us down, some are even friends! So apologies to the last few of you out there who still aren’t on board… We make West Coast IPA too! Hops: Strata, Ekuanot, Citra, Simcoe and Galaxy! 8.2%

Weighing in at a whopping 11.5% alcohol by volume and infused with 10 lbs per barrel of Citra, Quadruple Dobis is brewed as the ultimate Citra experience. Quad Dobis, as we like to call it, oozes with hop nectar levels of lychee, mandarin orange, pineapple, mango and ganja from additions of Citra T90, Citra Cryo and Citra Incognito. If you love Citra as much as we do, then this is the beer for you! 11.5%

Seasons greetings from Cellarmaker! That’s right, we are getting festive up in here and to show you we mean business we bring you Wreather Madness, our Holiday Spiced Ale. This malty brew has notes of gingerbread and mulled cider from various rich barley malts and spice additions of cinnamon, nutmeg, ginger and vanilla. This is an easy drinking ale designed to help celebrate the giving spirit of the Holidays. 7.5%

A lightly smoked coffee porter made with a touch of German beechwood smoked malt as well as high quality English malts to create a chocolaty, roasty, base beer. Then, add two pounds of Sightglass Colombian Finca la Granada coffee per barrel for an intense but refined coffee character. 7.7%

Bourbon Blammo is the bourbon barrel aged version of our massive coconut imperial stout BLAMMO! For the 2023 release we blended five oak barrels: one stout aged for 26 months in a Heaven Hill Bourbon barrel; the second stout rested in a Blanton’s Bourbon barrel for 36 months; the third and fourth barrels were also Heaven Hill but this stout aged for 20 months. Finally about 10% barleywine was blended in after aging in a Willett Family Estate Bourbon barrel for 21 months. We then conditioned the blend on 35 lbs of organic toasted coconut per barrel. As always, it is ridiculous!

As the clock hits 10 for Cellarmaker we will release this blend containing several of our choicest barrels. Ten Year Barleywine brings together young and old barrels for a refined beer that has vibrancy and depth. 20% of the blend is barleywine aged for 8 months in Savage and Cooke Lip Service Rye whiskey barrels; 30% barleywine aged for 16 months in Weller Special Reserve Bourbon barrels, 30% barleywine aged for 16 months in Stagg Jr. Bourbon Barrels; and 20% Imperial Stout aged for 25 months in Heaven Hill 10 year barrels. We present this as a special offering that we know you will enjoy, but it also doubles as a birthday gift for ourselves… 16.2%

Limit 3 per person. Horus and Cellarmaker are back at it again with the release of our third round of collaboration barrel aged stouts. Nilla Nest was aged in Willett Rye barrels for 22 months and then conditioned on 3 pounds per barrel of vanilla beans from Tanzania, Peru and East Timor. The vanilla has layers and layers of decadent flavor ranging from Luxardo cherry to brownie batter, creme brulee to orange citrus. 14.8%

Adams Parachute is a collaborative brew with Casey Brewing and Blending that focuses on locally sourced ingredients. For this Brett Saison we sourced our malted barley, oats and rye from Alameda’s Admiral Maltings, Triple Pearl hops from Hoppin’ Raccoon Ranch south of Sacramento in Clarksburg, CA and yeast and brettanomyces from The Yeast Bay. The beer was brewed and fermented in stainless and then bottle conditioned for 10 months before release. The result is redolent of Spanish orange and white wine with some Brett funk. The flavor is pleasantly tart and layered with eucalyptus candy, rustic grains, tamarind and spicy hops. 6.4%

Our lovely solera saison that has resided in the same tank for 7 years. The story continues with new and familiar flavors as we continue to pull beer from the tank and then feed back in fresh unfermented wort. Lemony with hints of pear skins and dried apricots- Lost Wisdom is an elegant saison for everyday enjoyment. 6%

Batten down the hatches and prepare yourself for a collaboration three years in the making. Toppling Goliath and Cellarmaker are releasing their own renditions of Midnight Sea, a blended bourbon-aged imperial stout. In February of 2020, the dark malt masters of Toppling Goliath visited our San Francisco brewery and devised a deeply rich stout recipe. This inky, oily magic was first aged in a variety of bourbon barrels including Weller, Early Times, Dickel, and Woodford Double Oaked. We then further aged Midnight Sea in a second set of Weller barrels. When it was time to bring the components together we worked closely with the crew from Toppling Goliath to create a profile that could stand on its own but also be half of a two-part blend with Toppling Goliath’s own version of Midnight Sea. The confluence of these stouts is reflected in the artwork of the bottles where two parts of the same scene join into a more complete picture. 14%

Limit 6 per person. Barrel aged stout fans get ready to blast off as we release our newest batch of our classic imperial stout The Vastness of Space. For this version we aged the entirety of the batch in 10 year Old Rip Van Winkle barrels for 20 months. The rich chocolate and roasted elements of Vastness is complimented and enhanced by the char, vanilla and bourbon heat of the Old Rip Van Winkle barrels.

The Edge of Time is a single oak aged Barleywine. This is Batch 2 which conditioned for 14 months in 3 Willett Bourbon barrels. Pronounced fig and date character is intertwined with baked cinnamon rolls, toffee drizzle and oaky vanilla from the slow maturation. We recommend allowing your pour too warm to close to room temperature and allowing the carbonation to diminish so that all of the rich flavors may speak without restriction. 14.8%

This Barleywine was skillfully crafted with almost 90% Scottish malted barley from Simpson’s Malt, which is also one of the malts that Highland Park incorporates in their whisky. During aging in the oak the base beer develops intensely rich attributes resembling toffee, molasses, wild flower honey soaked almonds, Turkish delight and rustic rye loaf. The peat smoke of the whisky, restrained as it is, still imbues Simmer Dim with the most intriguing campfire background that plays nicely with some boozy heat. 14.5%

Home, Sour Home is our golden sour beer fermented with Brettanomyces yeast and Lactobacillus bacteria. It's aged in oak barrels with peaches, cinnamon, and vanilla bean, simply reminding us of homemade peach cobbler. 7%

Blurred is a series of beer/wine hybrids that combines techniques and processes from the winemaking world with mixed fermentation practices from the sour beer world. Blurred Rose utilizes whole cluster grapes from our friends at Heringer Estates in Northern California, that we crushed and destemmed in-house. A blend of Barbera and Pinot Noir grapes were utilized in tandem to produce aromas of tart cherry, blackberry and strawberrry, while the mixed fermentation beer provides a soft canvas of mellow asian pear and citrus. 10.1%

Democracy is worth drinking for! 25% of proceeds from this cider will be donated by Tilted Shed to Black Voters Matter (mobilizing Black voters and fighting voter suppression) and The States Project (focusing on on winning progressive majorities in state legislatures) to protect our fundamental rights. A blend of organic, dry-farmed Pink Pearl, Golden Delicious, Gold Rush, Jonathan, Wickson, Arkansas Black, Macintosh, all grown in Sebastopol. Notes of green apple, lemon verbena, lemon curd, fresh hay, juicy, bright, summery, delicious! 8%

Fresh, tropical, semi-dry cider infused with Brazilian pink guava just before final packaging. We think it pairs well with tiny paper umbrellas and your favorite Hawaiian mixtape. 6.3%

Wild-fermented blend of Sonoma County organic dry-farmed apples: Gravensteins, Golden Delicious, and Rome from Sebastopol’s Vulture Hill Orchard, Nehou and Muscat de Bernay from Murray Ranch, Sonoma Mountain. Vibrant, just a touch semidry, with a plush tannic structure and notes of cherry, apricot, lemongrass, and orchard floor. Unfined, unfiltered, minimal sulfites. Just a touch for a funky-fresh, fruit-forward cider experience. 8.5%

Feral blackberries handpicked from the perimeter of our farm and wild native elderberries we foraged from near the Russian River macerated on organic dry-farmed Gravenstein juice from Vulture Hill Orchard, Sebastopol. Our love letter to the bounty of Sonoma County, with a touch of earthy tartness, layered with notes of bramble, dark berry, and wild herbs. 8.5%

Creamy strawberry and rhododendron blossom explode from the glass with touches of watermelon rind. Juicy on the palate with an invigorating lemon curd acidity.

Cellarmaker Brewing's first wine release. Our 2019 Pinot Noir has fruit sourced from the West Sonoma Coast AVA, aged 22 months in neutral French Oak Barrels with 50% whole cluster fermentation. This wine is packed with aromas of cranberry, strawberry preserves and rose petal. On the palate we get bing cherry, cedar, blackberry and white pepper. A silky mouthfeel and bright acidity contribute to a refreshing and balanced finish.

Our Syrah is grown at 2700 feet elevation in Mendocino. Fermented with 50% whole cluster in new oak. Aromas and flavors of blueberry, blackberry, chocolate, star anise, cigar box and subtle smoke. This Syrah delivers massive flavor from one of our favorite grape growing regions in California. Mendocino County, CA 14.2%
