Each year's hop harvest is often thought of as a linear progression: present becomes the past all the while moving into the future. Unbeknownst to most of us, Turok exists within a pseudo-Pacific Northwest – hop farms of the now, the past & soon to be, traveling between periods of time seeking out the best. Here at Cellarmaker we relate to Turok. Our satisfaction comes from finding the best hops no matter where or which crop year they are, as long as they are FIRE. This latest batch of Turok: Mosaic Hunter features 2021 Mosaic and 2021 Mosaic Cryo.

We love New Zealand Nelson Sauvin. It is by far our favorite hop. No other hop has such a wide range of aromas and flavors so it’s perfect for a single hop beer like this. We used two of our favorite lots of Nelson from Freestyle Farm’s 2020 harvest. We think this is the perfect showcase of what Nelson can and should smell and taste like.

Cantaloupe Island, hopped primarily with experimental hop HBC 630 with smaller amounts of Citra and Simcoe is exceptionally dank and resinous with enticing tangerine, melon and mango aromas. The flavor of Cantaloupe Island is tart and lemony and ultra smooth with a hint of piney hoppiness. It took 1st Place at The inaugural Bistro Hazy IPA Fest in 2018 and 3rd place in 2019! 7% ABV

Simcoe Galaxy was one of our first dozen IPAs or so. It is difficult to imagine an IPA that better represents modern hop combos. American Simcoe, the hop that rewrote the IPA playbook with intense pine, grapefruit and marijuana notes gets teamed up with the much sought-after Southern Hemisphere variety, Galaxy, the most potently tropical hop of all. The result is a sharp hop smack across your face that will surely get your attention! 6.8% ABV

A lightly smoked coffee porter made with a touch of German beechwood smoked malt as well as high quality English malts to create a chocolaty, roasty, base beer. Then, add two pounds of Sightglass Mexican Flor de Primavera coffee per barrel for an intense but refined coffee character

This blend of single & double oak stouts has been infused with the highest quality of ingredients we can source. Vietnamese cinnamon sticks, whole vanilla beans from Madagascar & Papa New Guinea as well as premium quality Ethiopian beans from Onyx Coffee Labs come together in a creamy, spice driven dance of rich decadence. Albeit an intensely bold beverage, the long term aging in various bourbon barrels gives Dessert Oasis a balance not always found in the pastry world.
