Our limited edition Barrel Finishing Series unites Tennessee High Malt with classic finishing casks. Crafted from unique mash bills—each with at least 25% specialty malted grains—every batch is custom-made to enhance the finishing barrel’s flavor and aroma. For our sixth release, our distillers revisited Islay, Scotland, home to some of the world’s most renowned smoky whiskies. Islay whiskies are defined by barley malt dried and smoked with native peat moss, a centuries-old tradition. Finished in three distinct Scotch whisky casks from three different distilleries, each barrel imparts its own unique peaty character. To amplify these flavors, our distillers blended three different peated whiskeys, made with three unique peated malts from three UK malthouses. Aged over five years, this layered approach infuses smoky complexity at every stage—expressing the depth of each ingredient, mash bill, and barrel. 750mL bottle.

Bottled in Bond is a single-season, vintage-dated expression of our Tennessee High Malt style. Each vintage is crafted from a wide selection of unique bourbon mash bills - all made within the same distilling season - and each comprised of at least 25% specialty malted grains. The result is an innovative approach to one of our industry’s most time-honored quality standards - showcasing depth and complexity that is greater than the sum of its parts.

These archived versions of bygone whiskeys are expressions of both nostalgia and discovery - each one offering a glimpse into our distilling team’s innovation and creative process. Made with over 18% mesquite wood smoked malted barley, Barrel 180529258 has a deep, earthy smokiness with a hint of pepper. Notes of maraschino cherries, grilled pear, and campfire.

Made with over 18% smoked malted barley, Barrel 180529271 is what we call a “top up” barrel and includes a portion of all three smoked malts: 36% mesquite, 38% apple, and 26% cherry. Notes of maple syrup and apple pie, with a sweet smoky finish.

For the love of rye! This Experimental Single Batch whiskey explores the complementary flavors of pot distilled rye malt whiskey finished within our very own amaro liqueur casks. Made from a 5-grain mash bill – including 4 varieties of malted rye – the whiskey was finished for 3 months in barrels that previously held a German-style amaro, which was infused with 14 botanicals and sweetened with dark candi syrup. Brimming with sweet & spicy character derived from both whiskey and finishing cask, this whiskey is sure to please the most adventurous and discerning lovers of rye.

Chattanooga's first distillery since Prohibition is celebrating a decade of experimentation! This commemorative bourbon recreates the flavors of a bygone era through every step of the process. Made from a multigrain mash of heritage-styled malts, each grain was selected to simulate the flavors of old-world farming and malting before being cooked and fermented with a unique, two-part mixed culture. After double pot distillation, the whiskey was aged for more than 4 years in a range of custom toasted & charred oak barrels, meant to mimic the cooper's craft prior to Prohibition. Bottled without filtration, this grain-to-glass whiskey fully embodies our whiskey-making mantra: "Rules are Good, Change Them."

Founder's Anniversary Blend is a marriage of whiskeys to commemorate our 13th anniversary. Formulated each year by our founder, this solera-style expression is blended from 3 one-of-a-kind charred oak solera barrels. Distilled in Chattanooga, TN and Lawrenceburg, IN, this combination of traditional and innovative recipes showcases the dynamic balance between multiple styles & sources of whiskey - each one symbolic of our past, present, & future.

Selected among the first 100 barrels from our Experimental Distillery, this original "Barrel 91" recipe is comprised of at least 25% specialty malted grains and is crafted to highlight the complexity of our ingredients through each step of the process. 750mL bottle.

Cask 111 is the unfiltered, single batch expression of our signature Tennessee High Malt recipe - our rich, malt-forward approach to bourbon. Comprised of at least 25% specialty malted grains, each 6-10 barrel lot has been selected to highlight the subtle batch-to-batch variation of this distinctly cask-forward bourbon. 750mL bottle.

NAMED WHISKY ADVOCATE'S TOP 20 WHISKIES OF 2020 Tennessee Rye Malt is our rich, malt-forward approach to rye. Inspired by one of our Experimental Distillery’s first batches of whiskey, our version of this rare and flavorful style was made from an abundance of slow toasted and drum roasted rye malt. The result is a bold reinvention of rye, brimming with sweet and savory notes of candied fruit, herbs, and spice. 750mL bottle.

Chatt Whiskey Silver is the "white" expression of our signature Tennessee High Malt recipe - also known as "Barrel 91". Named in honor of the complex process and character of our spirit, Silver showcases the complexity of our high malt mash bill, extended fermentation, and finely-tuned distillation process. Given that all whiskeys must legally make contact with a barrel prior to bottling, Silver briefly “kisses” the inside of a single use Tennessee High Malt barrel prior to its 100 proof bottling. This short aging process lightly softens the character of the white spirit, while maintaining the lively, fruity and malty-sweet character that our distillers have drawn from the distillation process.
