American Lager / 4.8% ABV - We're kind of nerding out on the lack of ability to nerd out on this style. That's not to say that the classic American Lager isn't a great style, we absolutely love Lager in all forms, but a classic American Lager is one of those styles where every little flaw screams to the heavens like Sam Kinnison on a booger sugar binge; but when cared for like an injured bird, and coddled day by day, you can get these Lagers to be simply incredible. Packed to the brim with subtleties and nuance Radios & Rodeos is about as crispy as a Lager can get with a mild graininess and hint of sweetness on the palate that dissipates with with every little explosion of Co2 on your taste buds, unlocking more subdued notes of white pepper, corn flakes, juniper leaf, magnolia blossoms, cheerios, and Americana.

Smoked Helles Lager / 4.8% ABV - Notes of french baguette, mildly sweet barley, sage blossom, honey biscuits, smoked bacon, tobacco leaf, and oak staves.

American Pilsner / 5.0% ABV - Crisp, clean, and crackery with complex classic lager notes and aromas of peony petals, toasted crackers, fresh hay, and white peach skins.

German Pilsner / 5.3% ABV - While fresh and lively, this beer has a distinct noble hop aroma and moderate bitterness to balance out the perceived sweet notes from the German Pilsner malt. In the case of Timing & Structure we use a restrained amount of noble hops to kick up notes of fresh cut grass, orange blossom, and birch bark; dancing in perfect harmony with mild honey, hazelnut, and bready notes from the German Pilsner malt.

German Black Lager / 5.5% ABV - The body is light, lean, and crisp. The roast flavor that first showed up on the nose is balanced by the dry malt character. The finish is softly bitter with lingering nutty dark carmel notes.

Fruited Sour Ale / 6.4% ABV - Kettle Sour Ale balancing fruit sweetness with acidity that tastes like melted rainbow sherbet [contains: Lactose, Vanilla, Raspberries, Limes, Oranges]

Gose / 4.8% ABV - There was about a 5 month period where Gose had its moment in the sun, everything was coming up Milhouse for the tart, salty style, and refreshing style; and then out of nowhere, like it was impersonating Hoffa, Gose disappeared without a trace. Always being ones to swim against the current, we're not leaving Gose to fade away in our quiver of Sours. For the Salted Seabreeze rendition we brewed up a fairly traditional Gose and fermented it loads of grapefruit and cranberries to compliment the tart and salty base that makes this Sour style stand out all on its own; with refreshing and effervescent notes of fresh sourdough bread, sea salt, lemon peel, and the classic flavors of a Seabreeze cocktail [hops: Grapefruit, Cranberries, French Grey Sea Salt]

Fruited Sour Ale / 6.0% ABV - A tart kettle soured Ale with loads of berries and vanilla, tasting like our parfait beers but vegan friendly [contains: Blackberries, Raspberries, Vanilla]

Tropical Sour Ale / 7.0% ABV - Tart, refreshing, and fruity Kettle Sour Ale packed with tropical fruit, hibiscus, and coconut [contains: Passionfruit, Pineapples, Tangerines, Limes, Coconut, Hibiscus]

Belgian Pale Ale / 5.8% ABV - Our take on a true classic, Olyvia is simple but void of any cut corners. Its ingredient list is simple; the best Pale Ale malt Belgium has to offer, a light dusting of two of the most classic European noble hops ever, and our favorite Trappist yeast to produce notes of pear, apple, banana, cherry, plum, lemon, and hints of pepper and biscuit. While often playing second fiddle to the more popular Belgian Golden Strong Pale Ales, the simple Belgian Pale Ale is maybe one of the greatest styles of beer in history; popping off all of the same esters and flavors that Belgium made famous but more sessionable.

Saison / 5.0% ABV - This wheat-heavy Saison features abundant malted and flaked wheat, complemented by citrus and hay-like esters from our original house yeast, now improved with Berkeley Yeast. This sessionable yet complex Farmhouse Ale carries notes of fresh hay, lemon peel, white pepper, and a touch of magnolia, with light hopping for a grassy character and a refreshing lemonade kick, inspired by French and Belgian Farmhouse ales.

Westcoast IPA / 7.0% ABV - Notes of ripe mango, pink guava, fresh passion fruit, juicy pineapple, candied peaches, sweet orange, ruby red grapefruit, and sticky pine. [hops: Krush T90 & Krush Cryo]

Westcoast IPA / 6.6% ABV - If 30th street in San Diego were a church, we'd be devout followers, inspired by the iconic hoppy beers of north county and the innovative second wave of IPAs from San Diego in the 2010s. Middle Out Westcoast IPA, a reimagined version of our favorite IPAs from that era, is a hyper-dry India Pale Ale with minimal malt character and a sharp focus on hop aromas. It bursts with flavors of ruby red grapefruit, peach rings, citrus blossom, passion fruit puree, lychee, pine, mango juice, and a hint of sauvignon blanc, showcasing the harmonious interaction of Simcoe, Amarillo, and HBC586 hops. IPA / 6.9% ABV - Juicy IPA with a lean and simple malt profile, medium body and all Citra hops to make it the orange juice of beers [hops: Citra]

Double IPA / 8.0% ABV - Easy drinking juice bomb that is loaded with notes of passionfruit, ripe melon, grapefruit, sauv blanc grapes, and blueberries. [hops: Mosaic]

IPA / 7.0% ABV - Notes of strawberry astronaut ice cream, passionfruit curd, fresh smashed raspberries, riesling grapes, sugared grapefruit wedges, mango puree, lime zest, papaya, and the stickiest of the ickiest weed. [hops: Strata]

Bourbon Barrel-Aged Imperial Stout / 15% ABV / This beer is a labor of love, brewed with rich maple syrup, fragrant vanilla beans, and a touch of cinnamon for a comforting sweetness that warms the soul. We aged this stout in maple and double-oaked bourbon barrels, layering in bold, complex flavors that remind us of a cozy, indulgent late-night breakfast.
