Our chicken stock is really more of a broth than a stock. It's delicious just sipped from a mug or you could add some rice or noodles and vegetables to make a very satisfying soup. Our recipe couldn't be more simple. We simmer a pound of very meaty Bell & Evan bones for each pound of water for several hours--until the meat has infused the water with all its good flavor. Then we quickly chill it down. The result is a super delicious brew that is a terrific base for soups and stew. It's also great in risotto, but you may want to cut it with a bit of water. It's intense!

Who can resist the charms of Prosecco, that light, bubbly, and easy-drinking wine from northern Italy. Let's face it; it's fun to drink and a lot less expensive than Champagne! This "brut" version from Adami is a long-time favorite at Hi-Rise. Adami's vineyards are in the heart of the most prized Prosecco zone--Valdobbiadene, a gorgeous region with fantastic food. This is a wine worth having in your refrigerator at all times.

*organic* Glera is the grape of Prosecco, but this wine is NOT Prosecco, which is very bubbly (spumante)! It is a slightly effervescent (frizzante), super delicious white wine that is refreshing, dry, a great match for seafood, and thoroughly addictive! Pierluigi Lugano, the proprietor and vignaiolo of Bisson, knows more than a little something about seafood. Lugano is most famous for his Vermentino, made from grapes harvested in his vineyards scattered around the Cinque Terre region on the Mediterranean coast. So why Glera? It’s a side project with a friend who happens to own stellar vineyards in Valdobiadene where he fashions stellar Prosecco. The result is an amazingly quaffable, lip-smacking, low-alcohol white meant to enjoyed before dinner or with seafood.

*organic + sustainable* This Cava would put some rosés from Champagne to shame! It’s surprisingly complex and delicious. It’s unusually expressive and quite unique. A thrill to drink. It’s almost a shame to associate it with “Cava”, the Spanish DO for fizzy wines made with the traditional Champagne method. Cava generally is in a rather sad state. But Juvé y Camps is a sparkling example of what Cava can, and should, be. This rosé is 100% Pinot Noir. It’s bottle-aged for almost two years. It’s then disgorged in the traditional manner and sent along its way. A joy to drink and a super price for the quality.

*organic + biodynamic* Cédric and Catherine Lacareaux immediately fell in love with this 250 year old estate in Régnie-Durette in 2014 when they first layed eyes on the vineyard. They are making a family life for themselves there, and we are all the beneficiaries of their efforts. They are producing a range of absolutely delicious wines all from Gamay, including this rosé, aptly named by their toddler, Margot, who was enamorred of the cocinelles, or as she said, “cossinelles” (ladybugs), in the vineyards—a symbol of organic agriculture. This is a vivacious and thoroughly delicious rosé.
$21.50 - Lelièvre, Côtes de Toul Rosé, "Gris de Toul" 2023 (org)
*organic* This wine is always one of the best rosé of the summer. Of course, that’s a very personal observation, but just sayin’! Certainly, it’s one of the most unusual. You don’t see Gris de Toul very often, at least outside of Lorraine in northeast France. This is as close to a true French country wine as you can get these days. Gris de Toul, by law, must be at least 80 percent Gamay—the appellation’s most widely planted grape. The rest of the mix here is Pinot Noir. All the grapes at the Domaine Lelièvre are hand harvested and sorted for quality. The wine spends 3 months on the lees, which gives it a big flavor boost. And flavor you get in spades! A delicious and refreshing drink!
$20.50 - Roquefort, Côtes de Provence Rosé, "Corail" 2023 (org+bio)
*organic+biodynamic* It’s and it’s great! The color is beautiful, the nose is fantastic, and the wine is packed with flavor—thanks to the amazing blend of red grapes, including Grenache, Syrah, Cinsault, Carignan, as well as Clairette. This is definitely not your run-of-the-mill Provençal rosé! This is a brilliant wine that’s refreshing, but shockingly sturdy. Drink this with seafood, of course, but it would be great with all sorts of pasta dishes, grilled sausages, and barbecued chicken. Bouillabaisse anyone?
$24.00 - Thibaud Boudignon, Rosé de Loire 2023 (org+bio)
*organic+biodynamic* This unusually delicious rosé is made from Cabernet Franc (90%) and Grolleau (10%). If not for the sake of variety, you might want to drink this gulpable rosé exclusively through the summer months. It’s that good! Boudignon, who cut his teeth on viticulture and wine-making while working at famed Philippe Charlopin in Burgundy, spends most of his time in the vineyards making sure his grapes are perfect. The results are fantastic. He’s most famous for his Savennières, but his rosé is super refreshing and delicious. It’s great before dinner with snacks and with all sorts of dinner foods. But it’s in very short supply and chances are good it will be gone in no time. Buy it now and enjoy it as often as possible.
$25.00 - Müller-Ruprecht, Pfalz, Pinot Noir Rosé 2023 (org)
"org" Sabine Wöhrwag (née Müller) and her husband Phillip took the reigns of this old estate (established 1702) and sidestepped tradition to make extraordinary and atraditional wines. The focus is on Riesling, but they have succumbed to the allure of Pinot Noir, which prospers in the limestone rich soil of Pfalz. How fortunate for us. This rosé, which is 100% Pinot Noir, is just a joy to drink. It’s wonderfully aromatic, loaded with fresh fruit flavors, and it has the zippiness that keeps you coming back for another sip. The pale pink color belies the richness of this rosé. If you like having a glass of rosé before dinner, this is the ticket. But it’s also great with everything from salade Niçoise to grilled chicken.
$23.50 - Seehof, Rheinhessen, Pinot Noir Rosé 2023
Once upon a time, Rheinhessen annually produced a sea of plonk, which included, most notoriusly, Liebfraumilch. It was a shame, especially considering the fantastic soil and terroir of Rheinhessen. Fortunately, a group of young, energetic, and very talented wine-makers are today taking full advantage of the Rheinhessen’s riches. Florian Fauth at Seehof is at the forefront of the movement. This rosé from Pinot Noir may well rock your “pink wine” world! It’s dry, of course, but super smooth and delicious. It has the perfect amount of zip to balance the plush, almost velvety texture of the Pinot. You can enjoy this wine with snacks or dinner all fall and winter. A rosé for all seasons!

"practicing organic" Alexander Loersch is one of the undisputed leaders of a new generation of German winemakers who focus on ultra-specific terroir, varietal accuracy, and quality age-worthy wines. This introductory wine from Loersch will convince anyone the guy is serious and seriously good at making delicious wine. The grapes for this wine come from a vineyard heavy with “Blauschiefer” or “blue slate” which gives the wine its distinctive and alluring minerality. It’s dry as a bone, but still incredibly juicy. It’s a lip-smacking drink that keeps you coming back for another sip. You’ll like this before dinner as an aperitif, but it’s also great with grilled seafood, chicken, and sausages. Amazing with cheese—the creamier the better!

*sustainable* Nigl is one of the best wine estates in Austria. Period. Martin Nigl, owner and winemaker, produces some of Austria’s most amazing white wines. This entry-level Grüner, in this vintage, is irresistible. If you like Grüner Veltliner, and who doesn’t, you’ll love this ripe, juicy, complex wine. This is really absurd quality at this level. You’ll like this before dinner with snacks, or with many entrées from fillet of cod or halibut, or even roasted striper, to fire-grilled chicken or a Cobb salad.

*organic* Stefan Rumpf and his young son Georg are now making grand cru level wines that are second to none in the Nahe region. *organic* Aligoté Doré is a Burgundian variety particular to the appellation of Bouzeron, where it’s been grown for hundreds of years. It makes a fantastic white Burgundy, one which can rival many Chardonnay premier cru—at least when the winemaking is in the hands of Aubert de Villaine, who inarguably produces some of Burgundy’s best wines at his other property, the Domaine de la Romanée Conti. This pale yellow Aligoté has oodles of fruit which is balanced with that distinctive zippy finish. This wine is perfect as an aperitif, or it would be a great match for a raw seafood platter, but it would be a perfct foil for a roast chicken. If you could keep a few bottles for some years (ten or more), your patience would be repaid with a wine that could be mistaken for a top Meursault. Brilliant stuff.

*sustainable* Frédéric and Céline Gueguen seem too young to be turning out such pure and delicious wines. But they obviously know what they’re doing—the proof is in the bottle! Even their Petit Chablis, literally "Little Chablis", is an irresistible expression of the terroir—crisp, seductively ripe, and refreshing. It’s the sort of wine that keeps you looking for just one more sip. It’s everything white Burgundy, and particularly Chablis, should be. Their premier crus are amazing. This is a domaine to watch! We certainly will be bringing in as many as we can get our hands on. A joy to drink.

*new vintage* *organic* When a winemaker starts talking about 100-year-old vines and organic farming, you can’t help but think the wine will be expensive. And when you taste that wine, and it tastes absolutely delicious, you KNOW it’s going to be expensive. But contrary to the evidence, this beautiful Mâcon-Villages from Philippe and Estelle Baptiste is remarkably good and remarkably inexpensive. Seriously, this is very classy juice with excellent depth and perfect balance. It’s suave and sophisticated without being pretentious. Matteo Ascheri makes delicious wines that are easy to drink. That’s true of all his wines, from his high-end Barolo to this refreshing Arneis. The Arneis grape was almost extinct in the early ‘60s, when only a couple of acres of vines existed. But the grape was “rediscovered” and there are now more than 1,500 acres under Arneis vines. This light, crisp, dry white has great flavor and is made to be enjoyed before dinner, with snacks, including a piece cheese, a handful of potato chips, or a few slices of hard salami. At Matteo’s house, he always serves a glass of Arneis with a big bowl of bite-size chunks of Parmigiano. You can also enjoy this Arneis with light dinners, including shrimp cakes, grilled chicken, or roasted cod.

*sustainable* Husband and wife team Olivier Roten and Laine Boswell met in Switzerland, fell in love with each other, and fell in love with Swiss wine. Together they founded Avalanche winery, which for them is a way of paying homage to Swiss wines and traditional Swiss varietals. About 98% of all Swiss wine is consumed, and tremendously enjoyed, in Switzerland. This red from Avalanche is 100% Pinot Noir, the most widely planted varietal in the country. It’s fresh and refreshing, light-bodied but flavorful. It’s a wine to enjoy with simple foods – a roast chicken, grilled sausages, and certainly fondue. Drink a glass of this Pinot and you’ll probably understand why the Swiss are very stingy with their wine.

Alain Coudert’s Fleurie is one of the best and most distinctive. It’s a favorite among Hi-Rise customers. The Clos de la Roilette is a fantastic vineyard, which actually borders Moulin-à-Vent.

Anne Sophie Dubois is a true a believer in the tradition of Beaujolais. She farms small parcels in Fleurie—perhaps our favorite cru. She produces delicious wine that is exactly what Beaujolais is supposed to be—refreshing, satisfying, and a perfect match for a wide variety of foods. This Fleurie is luscious. Some might say it’s sexy. In any case, it’s ready to rock and roll right now. Bring on the roast chicken and French fries!

*organic* Never heard of the Coteaux du Lyonnais? The reason is simple; virtually all the wine produced in the appellation is consumed in and around Lyon—by its denizens and in the city’s legendary restaurants and bistros. And why not. It’s inexpensive, delicious, and local. Take for example the Traboules. Like all reds from the zone, it’s 100 percent Gamay—like Beaujolais. Coteaux du Lyonnais does, in fact, share a border with Beaujolais to the north. But to the Lyonnais, it’s their own thing and they love it. You will too. It’s bursting with red and dark fruit flavors and earthy undertones. It’s a perfect food wine—just the thing with sausage Lyonnaise.

*sustainable* If Fleurie is the queen, or most feminine wine, of Beaujolais, then Moulin-à-Vent is the King—or so the saw goes. The best examples (and this is one) are bigger, richer, age longer than the other crus, and are rather atypical Beaujolais in general. Diochon is old-school, to say the least. Bernard farms only about 12 acres. The vines are between 50 and 85 years old. The wines are indeed rich, juicy, and a real joy to drink right now! However, if you like, you can put away this wine, especially the 2022 vintage, for some years. You will be rewarded with a wine that drinks much like an old Burgundy. But it’s difficult to resist this lip-smacker right now!

*biodynamic* You will almost always find one wine or another from Burgaud at the Hi-Rise. He may be the best winemaker in Beaujolais! His wines, from basic Beaujolais Villages to his vaunted single-vineyard crus, are exceptional year in and year out. He is a proponent of biodynamic viticulture, and virtually everything in his vineyards is done by hand, though he brings in horses for the heavy work. No machines! Burgaud's Morgon vineyard, Les Grands Cras, boasts vines more than 65 years old. The vineyard produces exceptional wine. Of course, it's loaded with fruit and it's frightfully easy to drink, but it's also loaded with mineral character. It's really something!

"organic" Jean-Paul Thévenet was one of the notorious Gang of Four, a group of producers who had the vision, as well as the guts, to change the course of wine-making in Beaujolais. When 90% of the juice from Beaujolais was used to feed the “Nouveau” frenzy, they went back to basics and began to make wine the old-fashioned way in the cellar, and in the vineyard without herbicides and fertilizers. They produced lip-smacking Beaujolais of substance that would age beautifully for years. Jean-Paul’s son, Charly, worked for three years with another “gangster”, Marcel Lapierre, before joining his father in the winery. This wine, made from 70-year-old vines, is a remarkable example of how great organic wine-making can be. The wine is deep, rich, and thoroughly delicious.

*biodynamic* The Perroud brothers, Robert and Michel, farm a few small, family-owned vineyards in Brouilly, the southern-most commune in Beaujolais. The soil is generally clay and limestone, but this particular vineyard has a layer of amethyst, a violet crystal often used in jewelry. The brothers learned farming and winemaking from their father and they stick to very traditional biodynamic methods. The results are really delicious. The wines are deep, earthy, and lip-smacking good. This is a great food wine—summer, fall, winter, and spring. Really great with everything from pasta to chicken pot pie, or grilled steak tips.

*lutte raisonnée* At one time, Château Thivin and the Domain du Pavillon de Chavannes merged through marriage. For more than 40 years, with all the best vineyards on the hill, the joint domain was the benchmark for great Côtes de Brouilly. When the last member of the marriage died, the domains reverted to the respective heirs. Both continue to make amazing, classic Côtes de Brouilly, due in part to their outstanding vineyards. This version, from Pavillon de Chavannes, is the “Cuvé des Ambassades” and is stocked in every French embassy around the world. The wine is always the lushest, most concentrated of the Côte de Brouilly. As always, this is one of the best food wines anywhere.

Aubert de Villaine, and his American spouse Pamela, own half of Domaine de la Romanée Conti, which arguably produces the greatest wines in Burgundy. On the side, Aubert makes several reds and whites in the Côtes Chalonnaise. These are Aubert’s “house” wines—not-so-simple wines which exude freshness and quality. La Digoine is made to be enjoyed 8 to 12 years after release and for the next four or five years. So, if you’ve ever wondered what the owner of DRC drinks for dinner, wonder no more. Try a bottle or two. What a great drink!

"organic" As of 1988, most of this great Burgundy estate was leased out to sharecroppers, including Henri Jayer, perhaps the most famous Burgundy winemaker of the last century. So revered are his wine that they sell today for as much as $45,000 a bottle. When Jayer retired in ’88, the young Jean-Nicolas Meo, whose father was an absentee owner, took over the estate and fortunately for all concerned, Jayer consulted. The wines are still made in the Jayer style, which is to say they are easy to drink but still full-flavored and complex. Jayer loved to eat well and he thought wine should complement food and not compete with it. This simple Bourgogne rouge is an eminently delightful wine that lives up to Jayer’s standards.

*organic* Bernard and his son, Mathieu, make luscious Chinon from Cabernet Franc—and only Cabernet Franc. They make five cuvées, but this one is the sort of red you’d find at an excellent Parisian wine bar, where you’d be tempted to drink glass after glass with plate after plate of delicious charcuterie. The wine is rich, round, packed with flavor, and perfect to drink right now—maybe even slightly chilled! Of course, this Chinon would be fantastic with duck confit, or an earthy beef stew, or even a chicken pot pie. And bring on the grilled steak, chops, or mushroom lasagna.

*organic* If you haven’t yet discovered the wonders of Loire Valley Cabernet Franc, then this is the time and this is the bottle! Bourgueil is one of the three tiny towns in the Loire that form the “golden triangle” of Cabernet Franc. (The other two are Chinon and Saumur.) While Chinon is often the star of the show, this Bourgueil from Chanteleuserie is definitely a scene stealer. It’s exactly the sort of wine you’d expect to drink in a really good Paris bistro—rich, juicy, earthy, and downright sexy. So if you’re looking for something to go with that chicken pot pie, or perhaps braised duck legs, or mushroom pizza, look no further.

*organic* Generally, a good Bandol requires at least five years of aging. That’s certainly true of the superb Bandol from Château Pibarnon. And really, a ten-year-old Pibarnon, which is 100% Mourvedre, is just starting to reach its apogy! But amazingly this “second label” Bandol from Pibarnon is great to drink right NOW! It’s a blend of 70% young vine Mourvedre and 30% Grenache. This intense lip-smacker is packed with luscious, ripe flavors. It’s incredibly satisfying. Perfect with all traditional Provençal dishes. By the way, Les Restanques are “The Terraces” of the Pibarnon vineyard, which are cut into the steep slope of a natural amphitheater. Pibarnon is the highest vineyard in the Bandol region.

*organic* Owner Aimé Guibert, the reluctant star of the documentary “Mondovino,” is one of the leaders in the fight again insipid “international” wine—that is, the sort of wine that bears no relation to either the soil from which it came or the culture in which it was made. Guibert leads also by example. His “Grand Cru” wines are extraordinary. This simple red, a blend of Cabernet, Merlot, Syrah, and Grenache is shockingly delicious and, of course, it’s organic! A great sipping wine, but fantastic with food, especially anything from the grill. A perennial fave at the Hi-Rise.

*organic* J. L. Chave arguably makes the best wines of the entire Rhône Valley. The family-owned domaine, handed from father to son since it was established in 1481, is most famous for its red Hermitage, a wine made from 100 percent Syrah. Mon Coeur, his introductory level wine is a blend of Grenache and Syrah. It ain’t Hermitage, but it’s still a delicious drink, with tons of rich, Provençal flavors and loads of character. But like Chave’s Hermitage, Mon Coeur is exceedingly elegant and easy to drink. This smooth wine would be perfect with any roasted bird. Also great with grilled steaks or lamb, or a chunk of Roquefort. Delicious wine!

This serious blend of Grenache (65%) and Syrah (35%) is a prime example of their skill in the vineyard as well as the cellar—it’s deep, lush, and remarkable satisfying. This is exactly what you want when you grab a bottle of Côtes du Rhône—a smooth and delicious drink. And it’s the sort of quality wine you’d expect from conscientious winemakers who use only natural fertilizers and don’t use pesticides. Super wine!

*biodynamic* Christine and Eric Saurel come from a long line of exceptional viticulturists and winemakers. In addition to their ever-popular Côtes du Rhône (also available at Hi-Rise), they make brilliant Vacqueyras in a completely natural and officially biodynamic manner. The Gaurrigues cuvée is a blend of Grenache (70%) and Syrah (30%) from vines that average 65 years of age. Old vines yield deep flavors. They call this wine Gaurrigues because it is redolent of the plains, or Gaurrigues, with its aromas of thyme, rosemary, savory, and wild lavender. The deep flavor is rich red fruits, including raspberry, and a touch of licorice. A very satisfying wine, indeed.

*organic* These days, the place to find all the rising stars of the southern Rhône valley is in Sablet. Though less known than other communes, such as Gigondas and Vacqueyras, Sablet is quickly moving up in the ranks, and Piaugier is one of the reasons. Jean-Marc Autran and his spouse Sophie, make some knock-out wines, including Gigondas, but this Sablet, made from Grenache and Syrah, is a scene-stealer. The color is deep and rich. The aroma is fantastic. And it’s loaded with dark, lusty Provençal flavors. This is the sort of wine you want with a big, thick, grass-fed sirloin steak, or spit-roasted leg of lamb. And it’s pretty amazing with a chunk of Roquefort as well. Delicious wine!

Here's one of the best "new" rye's we've tasted in a more than a few years. We don't know the mashbill (they won't say), but we do know Hochstadter collected straight rye whiskeys from five distilleries (American and Canadian) and blended them in a vat in Philadelphia. The age of the whiskies ranges from 4 years (the minimum for a straight whiskey) to 15 years. So you know MGP of Indiana is one of the sources! This whiskey has a classic spicy nose and the it's packed with caramel, pipe tobacco, and cinnamon--especially in the finish. Hochstadter's Straight Rye is best either neat or with a drop of water. Delicious stuff!

Michel Couvreur was a rare bird indeed. A Belgian wine-merchant specializing in Burgundy, he fell in love with Scotch whisky in the 1950s, and made it his life’s work. Today his right-hand man Jean-Arnaud Frantzen and his son-in-law Cyril Deschamps continue his craft. They age the spirit in their cellars in Burgundy, using the hand-picked sherry butts that they consider the secret to truly great Scotch. Recently they lost the right to use the name Scotch. Though distilled in Scotland it is aged and bottled in France, and can only be called malt whisky. But the whiskies remains unparalleled: a nose full of dried flowers, and a powerful palate of sherry, tobacco and dried fruits.

The are several reasons Morin is one of the best Calvados producers. It starts with Normandy's apples. Apples have been grown in Normandy since the 8th century. Today more than 800 varieties of apple grow in Normandy, most of which were bred specifically for cider. They can be sweet, bitter, tangy, bitter-sweet, and usually quite tannic. These apples are not good to eat, but they make great cider and then great apple brandy. Naturally fermented apple cider has been distilled in Normandy since the early 1500s. Morin's Calvados is aged in old oak barrels stored in 200 year old caves. This VSOP is aged 5-6 years. It's smooth, incredibly aromatic, and redolent of fresh apples. Most important it has a distinctive and alluring flavor of apples. Don't think this is only a great way to end dinner. Morin's VSOP is delicious in cocktails--think Old Fashioned!
