Saturday Tasting: Wines from Foradori
- Fable Farm Fermentory 'Petite Pearl' Sparkling Red Wine 2020$36.00
Variety: Manzoni Bianco Region: Trentino-Alto Adige/Südtirol, Italy This is a single vineyard expression from the Fontanasanta vineyard. Manzoni Bianco is an early-20th-century crossing of Riesling and Pinot Bianco. It was created by Luigi Manzoni ; he created a slew of hybrid grapes of which Manzoni Bianco (or Incrocio Manzoni 6.0.13) is considered the most successful. Fermentation is on the skins in cement tanks, followed by 12 months of aging in acacia casks.

Variety: Pinot Grigio Region: Trentino-Alto Adige/Südtirol, Italy This wine is the result of a collaboration between Foradori and Marco Devigili, a biodynamic winemaker from Campo Rotaliano. The name translates to "off the path" and indicates its' atypical treatment of one of Italy's most famous grapes. The grapes are destemmed but not pressed: whole berries ferment spontaneously and age in clay amphorae for eight months. The wine is then finished in oak and acacia casks for two months prior to bottling.

Variety: Teroldego Region: Trentino-Alto Adige/Südtirol, Italy Elisabetta's first wine and also the one that made her famous. First released in 1986, Granato has evolved stylistically over the years: it used to be much more marked by extraction and oak. Elisabetta's personal evolution, along with the arrival of her son Emilio at the cantina (he currently makes all the wines) have led to a much softer touch. However, it still remains the Foradori's most structured, age-worthy wine. From three very old pergola-trained vines planted on alluvial soil. These are the only vines still trained in Pergola on the entire estate. The rest were converted to guyot. All the cuttings for new plantations at the estate come from these vineyards.

Morei means ‘moro’ or ‘dark’ in the Trentino dialect and the grapes cultivated in this vineyard truly reflect this. Destemmed whole berries are put in clay amphorae for spontaneous fermentation and aging for eight months.

Color: White (Macerated) Variety: Sauvignon Blanc, Fié Gris, Chardonnay Region: Cheverny, Loire Valley, France 1/3 each Sauvignon Blanc/Fié Gris/Chardonnay. The name of the site, Frileuse, roughly translates to "little cold one", a nod to the flat, frost-prone nature of this vineyard. These three varieties are co-planted in one 3.8-hectare estate site, Fié Gris being the historical name for Sauvigon Gris, itself an old variation of Sauvignon Blanc originating in Bordeaux. Since Frileuse lies within the original Clos du Tue-Boeuf (which is in fact a clos), the estate name features prominently at the top of the label along with the estate's emblem of a cow with wings. This is how the Puzelat visually distinguish their historic land in Cheverny.

Color: Orange Variety: Sauvignon Blanc Region: Loire Valley, France Whole-cluster grapes are given a 10 day full carbonic maceration in stainless steel. They're then pressed and racked to fiberglass for aging.
- Domaine Lampyres ‘Point Triple’ VdF Blanc 2022$32.00
Color: White (Macerated) Variety: 55% Macabeu, 25% Grenache Blanc, 20% Muscat à Petits Grains Region: Espira de L’Agly, Roussillon, France The Macabeu and Grenache Blanc were harvested together and undergo a 7-day whole bunch co-fermentation in large fiberglass tanks. The grapes are then pressed, and the juice is transferred back to the fiberglass tanks to complete fermentation. The Muscat à Petits Grains undergoes a 15-day whole bunch fermentation before pressing. The components were blended after the completion of malolactic fermentation. Only the naturally occurring indigenous yeasts were used, and the wine remained on the fine lees until bottling.
