They are delicious battered with quality olive oil, fried in garlic, roasted in the oven or simply grilled and accompanied by a vinaigrette sauce. Since their meat is more fat they do not need to add more to be tasty and juicy. And if you want to give the anchovies a touch of distinction, they are a perfect ingredient to make some tasty canapés or an original and nutritious anchovy or pate paste. Boquerones (as the anchovy fillets are called in Spain) is a very popular appetizer or tapa, especially in southern Spain. These anchovies have been elaborated with selected fishing of the spring catches in the Cantabrian Sea. Bottarga is a delicacy of salted, cured fish roe, typically of the grey mullet or the bluefin tuna (Bottarga di Tonno). Produced around the Mediterranean is where the best-known version of Bottarga is and it has many names and prepared in various ways. A word about that pellicle: It is, in fact, the membrane that encapsulates the roe sac, which turns papery during the process of curing and drying. While it is not necessary to remove it, it is preferable. As Andrew Feinberg notes in Franny's: Simple, Seasonal, Italian, if you don't peel it off, "it might get caught in your teeth." Generally speaking, I peel only as much as I want to use, much like certain salami with indelibly chewy casings.

The small sardines of the Royal Spanish preservera come exclusively from the surroundings of the Galician Estuaries. The Small Sardines are fished in the Atlantic sea with traditional and sustainable gear. During their preparation, the small sardines are cleaned manually, removing the head, tail and the rest of the viscera that remain in the abdomen. This preparation is done very carefully so as not to tear the belly or the skin. The Small Sardines are then washed in brine and grilled one by one to roast them as in the old days, giving them the desired texture. Immediately afterwards, they are placed in the container and covered in olive oil (85% refined and 15% virgin). These preserves are always packed manually selected by their size. After packaging, The Small Sardines are stored in a dry environment and at room temperature, thus preserving them for 6 years.
