Boquerones White Anchovies Fillet of Cantabria
The Boquerones White Anchovies fillet of Cantabria is among the most prized species for canning or semi-preserves thanks to its intense aroma and the softness of its meat. They are delicious battered with quality olive oil, fried in garlic, roasted in the oven or simply grilled and accompanied by a vinaigrette sauce. Since their meat is more fat they do not need to add more to be tasty and juicy. And if you want to give the anchovies a touch of distinction, they are a perfect ingredient to make some tasty canapés or an original and nutritious anchovy or pate paste. Boquerones (as the anchovy fillets are called in Spain) is a very popular appetizer or tapa, especially in southern Spain. These anchovies have been elaborated with selected fishing of the spring catches in the Cantabrian Sea. Handpicked, by hand, meticulously one by one, they are of a larger caliber, and their color, flavor, texture and vinegar stitch are the unique beams.

Bottarga Di Muggine Smeralda
Bottarga is a delicacy of salted, cured fish roe, typically of the grey mullet or the bluefin tuna (Bottarga di Tonno). Produced around the Mediterranean is where the best-known version of Bottarga is and it has many names and prepared in various ways. A word about that pellicle: It is, in fact, the membrane that encapsulates the roe sac, which turns papery during the process of curing and drying. While it is not necessary to remove it, it is preferable. As Andrew Feinberg notes in Franny's: Simple, Seasonal, Italian, if you don't peel it off, "it might get caught in your teeth." Generally speaking, I peel only as much as I want to use, much like certain salami with indelibly chewy casings.

CALLIPO Tuna in water
Tuna Callipo is cut by hand in the richest and most tender part of the tuna. The main difference from standard canned tuna is its fat content, which gives it an incredibly creamy texture. These tuna fillets, tender and with a fine taste, are selected and prepared by craftsmen fresh and by hand. 100% natural and preserved in water. The fish is peeled and processed manually, which is of particular importance in the manufacture of the product since the absence of chemical products preserves the natural properties and ensures high-quality Tuna Callipo and food safety. As soon as the fresh fish is received, it is cleaned and sorted: only the back pieces, fat-free and very tender, are used to make the preserves. An exceptional product, the canned tuna fillet in water can be enjoyed as an aperitif, on a slice of good bread.

CALLIPO Tuna with Chili Peppers
Callipo Tuna Chunks with Calabrian Chili Peppers are made from the finest, most valuable tuna, hand-selected for its rich flavor and meaty texture. For the production of the fillets, all processing stages are totally carried out in Italy, in the plant of Maierato (VV), according to the secular Calabrian tradition. After steam cooking, the best fillets are selected and glass jars are manually filled, rigorously complying with food safety dispositions. The seasoning process, then, ensures a typical intense and unique taste. Callipo Tuna Fillets are the only ones containing Iodized Salt Presal, which is “protected” as it is subject to a specific technological process maintaining iodine levels constant even after cooking and in food preparations, and ensuring its assimilation. Fresh and traditionally cut and processed by hand. In this Jar Glass Fillets of Tuna Callipo, you will only find pieces of fillet professionally packed in the best olive oil. This combination is the guarantee for the excellent taste for the Callipo tuna recipes from; tuna pizza, omelet with tuna to the "simple" tuna sandwich baguette. Of course, no chemical products or preservatives are used in Callipo tuna either, ensuring the high quality and ultimately the special taste. The differences of Callipo tuna in a can and Callipo tuna in a glass jar lie in the more complex processing and sorting of the fillet pieces.
