Farmhouse Ale - Saison, 7.0% // Brewed with 100% Pilsner malt, French Strisselspalt and Hallertau Blanc hops, and an expressive Belgian yeast strain, this beer is a rustic expression of straw and hat, grass and white grape aromas, while open-fermentation nurtures the notes of bubblegum and black pepper. A bright and dry beer for the new season.

Porter - Baltic, 9.0% // Komes Porter Bałtycki was awarded a bronze medal at the World Beer Cup® 2014. Gold Medal at the European Beer Star 2013 for best beer in the Baltic Porters category. Komes Porter reflects the history of brewing, referring to the 18th century tradition of brewing porters in the Baltic states. At their prime, Baltic porters represented one third of the market, which is the best evidence of their popularity. We offer you a well-balanced, dark, strong beer with a distinct flavour. Slow fermentation at low temperatures in open vats, coupled with long (at least 3 months) maturation have resulted in the beer’s character and complete, complex nature. Wheat Beer - American Pale Wheat, 4.8% // A ridable American Wheat Ale boasting wheatey nuts & juicy Motueka hop bolts. The deliverer of this truth: Akari Shogun, He who harnesses light will usher this summer force into your life.

Lager - Japanese Rice, 5% // Pilsner malt and rice commingle with classic noble hope for a lean and clean, supremely dry lager.

Porter - Coffee, 6.3% // It's our world-famous homage to everyone's favorite Mesopotamian demon and his particular love affair with the bicycle. But then we threw some dark matter starry eyes cold brew and will be in there so you and your jaded friends can get a little swervey and a little jacked up and discuss how to fix this broken down jalopy of a world.

Farmhouse Ale - Bière de Garde, 4.3% // The counterpart to our Spring Saison “Cloud Buster”, this follows the same Nelson Sauvin hopping strategy and uses the same exceptional Omega yeast “Saisonstien’s Monster” but adds a touch of gently roasted malts to match the darker days of the season.

IPA - American, 6.5%, 500ml // Notes of tropical fruit (mango, pineapple), grapefruit, pine, and floral aromas of rose and chamomile. Little Whaleboat Islands (made up of Little Whaleboat, Nate & Tuck) are a cluster of 3 small islands and ledges in Casco Bay, a vital link in the chain of protected islands conserved by Maine Coast Heritage Trust. Protection of these islands provides sanctuary to a range of wildlife including seals, seabirds, shorebirds, and wading birds, while preserving a unique place off the coast of Maine for future generations to experience.

IPA - American, 7.0%, 500ml // Our “East Coast” version of a West Coast-style IPA. Intense hop flavors and aromas of tropical and citrus fruits and pine dominate. A subtle malt sweetness brings the beer into balance.

Historical Beer - Kentucky Common, 3.4% // One of only two or three beer styles considered to be indigenous to the US. Also known as a Dark Cream Beer or Common Beer, this style was brewed in the Louisville area from the Civil War until Prohibition. Then it was all but forgotten.

IPA - Imperial / Double New England / Hazy, 8.0% // Turntable Tropics is a hazy double IPA dropped in collab with the crew at Mikerphone Brewing. Krush, Nectaron, and Strata hops crank out flavors of juicy pineapple rings, zesty passionfruit flesh, and a dank grapefruit twist. Layered on a clean malt base, it rolls out a pillowy, tropical haze that dances on the palate. This one’s a vibrant, hop-soaked spinner.

Bock - Hell / Maibock / Lentebock, 7.5% // A strong lager with a beautiful golden colour. A truly robust body is crowned with distinctive hop bitterness and stable dense foam. The long-term ripening of Czech hop varieties and the delicate malt taste ensure the excellent drinkability of the beer. This beer ages in the brewery cellars for up to 100 days. Wheat Beer - American Pale Wheat, 5.3% // Cool off this Summer with a juicy and refreshing Chicago favorite built for the season. Bask in radiant citrus notes while soaking up its floral ambiance. By the time the leaves change, our Summer Ale will be just a sun-dappled memory, so crush a few while you've got the chance.

Sour - Fruited, 5.5% // Fruited sour with two pounds per gallon of Cara Cara Orange additions. Acid Rainbow is our "Sherbet Style" series of kettle soured ales, exhibiting the colors of the rainbow. No lactose.

Lager - American, 4.6% // Life can be easy when you live alongside the river. River Life is an American Pilsner hopped with Sterling hops. This beer is smooth, easy-drinking, and flavorful, flowing like a river over your palate.

Lager - Other, 4.7% // Every year for 6 years now the head brewer (Brian) at Pollyanna brews up a small batch of beer for his first born son Henry. In 15 years Henry can actually try one of these! Pilsner - German, 4.9% // We brewed our first Lager to celebrate our Taprooms 2nd Anniversary. Brewed with Weyermann Barke Pilsner & CaraFoam malts & fermented with the classic Weihenstephan yeast. This ice cold brewski showcases notes of jean shorts, not touching the thermostat, the aromatics of a freshly mowed lawn & endless appetizers at your favorite chain restaurant.

Lager - American, 4.5% // A premium lager for our premium friends. This easy drinking lager features Pilsner malt and a touch of corn for sweetness and drink ability that pairs perfectly with a best bud.

Cream Ale, 5.0% // Pistachios (species P. vera) have been used in culinary applications for thousands of years. For a much shorter period, innovative brewers have used them to add a luscious character to their beers. Our delicate cream ale with Caravienne malt adds a touch more body than some others might. At just over five percent, this is a session beer you’ll want to get crackin’ with.

Wheat Beer - Hefeweizen, 5% // Bavarian style Hefeweiss fermented with yeast from a monastic brewery at the foot of the Alps. Over 50% wheat malt including Carawheat gives a rich cereal-like flavor. A traditional German Hefeweizen, the original "hazy" wheat beer.

Wheat Beer - Hefeweizen, 5.1%, 16.9oz // Fragrance and taste of the “yeast-cloudy” wheat beer are distinguished by a refined top-fermented flowery-yeast character and an unmistakable, distinct banana aroma. First sensation on the taste buds is full-bodied, very soft and mild with a lively, champagne-like sparkle. A light, typical wheat beer taste is expressed, the bitter tone of which can scarcely be detected. The sparklingly refreshing Ayinger Bräuweisse will impress every wheat beer connoisseur with the first mouthful.

Lager - Munich Dunkel, 5%, 16.9oz // Up until the Second World War, dark beer was the predominant beer type in the Munich area. The hard water found in the region played a special role in producing this specialty. In his book “Beer International”, the world-renowned English beer writer, Michael Jackson, accurately describes the Ayinger “Altbairisch Dunkel” as: “A good example of its kind. Impenetrably dark with a golden-brown gleam when held up to the light, and with a warm aroma and malty taste, while summoning up coffee taste sensations on going down. It is brewed from five types of malt (two of which are torrified dark), and it is only lightly hopped.” It is produced using the traditional double fermentation process.

Lager - Pale, 3.8% // Brewed with Mosaic hops exclusively and a base of pilsner malt. Bright aromatics of citrus peel and tropical fruits lead into a refreshing light bodied beer with a medium bitter finish.

Wheat Beer - American Pale Wheat, 5.8% // Bell's Oberon is a wheat ale fermented with Bell's signature house ale yeast, mixing a spicy hop character with mildly fruity aromas. The addition of wheat malt lends a smooth mouthfeel, making it a classic summer beer.

Pilsner - Imperial / Double, 9.7% // Our friends at Haymarket Brewing Chicago came by to create a massive collab of non-traditional proportions. We present: Black Market Pils - Dry-Hopped Imperial Pilsner ABV: 9.7% IBU: 35 Brewed as classically as possible with true German pilsner malt and hand selected German specialty malts but supersized up 3x to create a huge sticky pilsner that was dry hopped with Hallertauer Mittlefruh hops for a crushable and crispy imperial lager with a wonderful floral hop aroma.

Lager - American, 4.2% // Light, crisp, and refreshing. Easy drinking, instant classic.

Wheat Beer - Hefeweizen, 4.5% // Hefeweizen is our traditional German-Style Wheat beer that is subtly sweet and fruity with the signature Hefe (yeast) characteristics of banana and clove. We designed this beer to be approachable for the masses, but still deliver on the unique stylistic components that traditionalist expect.

Lager - American Light, 4.2% // Bud Light is brewed using a blend of premium aroma hop varieties, both American-grown and imported, and a combination of barley malts and rice. Its superior drinkability and refreshing flavor makes it the world’s favorite light beer.

Bitter - Session / Ordinary, 3.6% ABV 3.6% on cask 4.2% bottled. It is, quite simply, a wonderful beer. It is exceedingly pale (21-22 units colour), with just a hint of colour in its cheeks from the dash of crystal malt. It has a massive orange fruit aroma from the challengers, balanced by biscuity malt. Juicy malt and tart hops vie for attention in the mouth while the finish is tart and hoppy but well balanced by creamy malt. The bitterness rating is a substantial 36-38. The tangy fruit lingers on the back of the tongue until it develops a hint of orange liqueur. Malt - Maris Otter pale malt and crystal malt Hops - Challenger

Pilsner - Czech / Bohemian, 4.6% // This pilsner is a showcase for Czech hops, brewed with 100% Pilsner malt and heaven's water. A Chicago recreated version of the soft water of Plzen.

Rauchbier, 5.3% // Our version of the Bamberg classic. Dark with reddish tones and an off-white head with a rocky foam standing above the rim of the glass; as you bring it to your nose, you feel like you are eating a chocolate bar in a smokehouse, full and rich with generous hopping to balance the flavor of beechwood smoked malt.

Lager - Vienna, 5.1% // Mozart played full-volume in the brewhouse as the Dovetail Vienna Lager was born. Copper in color, with a warm, malty character, it is brewed with 100% Vienna malt and Styrian Golding hops.

Lager - American, 4.8% // Our latest batch of House Lager! Brewing and drinking this beer the past few months has brought us so much joy. We hope you are also joyfull. This batch was made with German Pilsner malt, and hopped with lots and lots of Saphir and Saaz. We find notes of foolishly reseeding your lawn in mid-summer, high altitude oolong tea, lemon scented herbs, austere but delicious apple strudel, the bulk flour section at the co-op, and medium rare toast.

Pilsner - German, 4.9% // Our Pils is a beautiful representation of German pilsner malt and noble hops. This beer is for the drinker who prefers a little more hop presence with a subtle bite that dissipates smoothly into a depth of floral, herbal, and honey flavor. We pour this beer slowly (be patient, it’s worth it!) over the course of approximately five minutes to allow all of the aromas and flavors to meld into your glass and deliver it to you with a soft pillowy head. The inspiration for this beer comes from Brewer Tom’s unforgettable experience drinking his favorite Pilsner in the German Alps.

Due to the double decoction method of brewing, we achieved a unique depth of malt flavor that is balanced by Czech Saaz hops. Golden Ale - Ukrainian, 6.1% // Brewed in collaboration with Varvar Brew in Kyiv, Ukraine, this Ukrainian Golden Ale won a gold medal in the US Beer Open. Brewed with coriander, this beer has slight sweetness from a high finishing gravity and hints of phenols from cool-fermented Belgian yeast. “Peremoha” means “Victory” in Ukrainian - enough said.

The Field Museum was opening a bistro and bar. John was opening a brewery. Lager - Helles, 4.7% // HEY CHICAGO WADDYA SAY?! baseball's back and we brewed a special beer to celebrate. A beer brewed for beer lovers and baseball lovers. This completely crushable German Style Helles is being released today on opening day! Aromas of fresh baked bread, pepper and flower rise through the fluffy head of foam. Sweet, malty flavors bubble up with the carbonation and finish with a soft mouthfeel.

Cream Ale, 4.8% // Hipsters - the connoisseurs of counterculture and anti-industrialism. A tribe that values time honing their craft and sharing their passion with others, not just toiling away at work to make a buck. They're recognized by their vintage tees, beards, trucker hats, indie-alternative-folk music, beanies, and skinny jeans - driving beer choices and rescuing beer styles on life support. One such style, the American Cream Ale, is making a resurgence. Ours is pale-straw, well-carbonated and balanced, with a biscuity malt sweetness and whisper of citrus notes. We mash-in cracked corn with malted barley, and ferment it in our open fermenter to give the beer its crisp, signature flavor - just begging for another drink. Because this beer is brewed in an area still dotted with farms and ranches, we felt it was more appropriate to name this beer after Hipster's country cousin - Hickster. Skinny, tight fitting - no, never. Loose, relaxed, husky. Yeah - that's it.

Pilsner - Other, 5% // Stella Artois was first brewed as a Christmas beer in Leuven. It was named Stella from the star of Christmas, and Artois after Sebastian Artois, founder of the brewery. It is brewed to perfection using the original Stella Artois yeast and the celebrated Saaz hops. It is the optimum premium lager, with its full flavour and clean crisp taste.

Shandy / Radler, 2.0% // Real grapefruit juice gives this deliciously refreshing Radler (mixed beer drink) its amber natural cloudiness and pleasant tangy taste. The refreshingly fruity taste makes Stiegl-Radler Grapefruit a wonderful thirst quencher. 100% natural ingredient and brewed with alpine water from Mt. Untersberg.

As is appropriate, Taj Mahal is brewed from only the finest water, grain, hops and yeast. It is a delicious and refreshing drink to the utmost! A cool, tall, six hundred and fifty milliliter bottle of Taj Mahal is the best way to refresh after a long day of work… or with a particularly spicy meal. Taj Mahal is as monumental among the beers of the world as its namesake is to the country of India.

This beer is extremely crushable and perfect to quench your thirst after shredding on the mountain all day. Don’t leave home without your Lift Ticket!

We highly suggest you stock up on this one because every fridge deserves some Really Decent lager in it.

IPA - New England / Hazy, 7.0% // How much is too much when it comes to hops? How juicy can an IPA be? Dunno. Let's find out. This trial puts Southern Cross, Pacifica, and Cryo Mosaic to the test. A combination of juicy, citrus, and tropical aromas and flavors will emanate from your glass, including mango, mandarin orange, lemon, pear, and stone fruit. A softer mouthfeel accentuates the juice. Examine the evidence for yourself- you be the judge.

Our Waldos’ Special ale is a triple IPA made with that original crew’s hand-picked selection of the dankest, headiest hops around and it can only be scored around April.

IPA - New England / Hazy, 6.8% // The First release in our “New Orthodox” IPA series, M-43 is designed to accentuate the deep and complex character from the combination of Calypso, Amarillo, Citra, and Simcoe hops. Citrus and Tropical notes of Pineapple, Mango and Grapefruit come through in the huge, yet surprisingly delicate aroma. The flavor backs these aromas with a soft, pillowy mouthfeel. Hop bitterness is not particularly intense, which leads to a very drinkable, juicy IPA even non-IPA fans love. The Haze is not from yeast, but rather from an interplay of lipids from the malted oat and oils and acids which naturally occur in the hand selected Dry hops. This beer is a perfect interplay between top grade malt and hops, MI water and brewing technique which cannot be faked.

Pale Ale - American, 6.0% // Our most hopped beer EVER! Double hop backings Cascade, Citra, and Mosaic hops brought out the aromatic pleasures of a hip rub including sweet, savory and slightly dank aromas with fruit notes of passion fruit, cantaloupe, honeydew, and candied fruits.

IPA - Imperial / Double, 9.0% // A bit more heady but still a gentle giant, a not-too-distant relative to Herbasaurus. With Eureka, Apollo, Simcoe, Columbus, and Centennial hops made more dank by the addition of Pineapple Express Terpenes.

IPA - Red, 9.5% // Imperial Red IPA with Cascade, Mosaic and Chinook hops. We've been brewing Blood of the Unicorn for some time now... so thought it was high time to kick this beer into second gear. Imperial Blood of the Unicorn is a bigger, more bold, more metal, Blood of the Unicorn and whoa. This beer has beautiful expressions of pine, citrus, white flowers, and spicy malt notes from the rye malt.

Red Ale - American Amber / Red, 6.3% // Hoppy Red Ale

IPA - Imperial / Double, 8.0% // Ninja Vs. Unicorn celebrates the epic battle between two of the biggest hop-heads of lore. Brewed with over five pounds of hops per barrel, this unfiltered double IPA is sure to please the most discerning hop lover. Whether you're rooting for the mythical horned horse or the deadly assassin of the east, we hope you'll enjoy Ninja Vs. Unicorn.

Pale Ale - American, 6.3% // Pale Ale with Galaxy, Cascade and Cryo Citra

IPA - American, 7.3% // Sometimes, the English language just doesn’t have a word for something. There are words like YOLO, twerk, and OMG, but for some reason there isn’t a plural word for “you.” Sorry, but “ya’ll” or “youse” or even “you guys” doesn’t quite fill the lexical gap. Our Lexical Gap IPA is straight west coast, you guys (see what we did there?). Brewed with massive amounts of Citra, Centennial, Simcoe, and Columbus hops, finding a word to describe your gratification might be pretty tough. Most expletives, however, will probably suffice.

IPA - American, 6.7% // Our flagship IPA is supremely aromatic, crisp, and drinkable. This iconic ale features a blend of Warrior, Chinook, Centennial, and Amarillo to create a crisp clean bitterness and imparts massive floral and citrus aromas. An American hop assault for all the ambivalent warriors who get the girl in the end. “Look, I ain't in this for your revolution, and I'm not in it for you, Princess.”

Pale Ale - American, 5.5% // A supremely drinkable Chicago Pale Ale brewed with lots of 2 row and red wheat with a little specialty malt for a beautiful golden hue. A blend of Centennial, Citra, Chinook, Cascade and Crystal hops give the beer its flavor and aroma. Magnificent California hop aromas play in perfect harmony with this brew’s extremely satisfying finish.

IPA - American, 6% // Longsnapper is a West Coast-style IPA brewed in collaboration with longsnapper Patrick Mannelly, the longest tenured player in Chicago Bear history. We designed a recipe together based on Pat’s favorite beer styles and will be released for the inaugural “Patrick Mannelly Award” given to the outstanding college Longsnapper of the year. The beer has ample base and Vienna malt accented by caramel notes from carastan and Munich malts. Hopped with a trio of traditional northwest hops, Columbus , Cascade and Centennial that create a well-balanced, crushable beer.

Pale Ale - American, 5.4% // Brewed as a love letter to the trendsetters out on the east coast, Dank Meme is golden colored pale ale, 45 IBUs and 5% alcohol by volume. This beer is me not caring about clarity or aesthetics, in fact not a single fining was given to this beer. We hopped this beer like a boss, Azacca, El Dorado and plenty of Citra in the finish are sure to make you say, 'O rly? Me Gusta!'

Pale Ale - American, 6.4% // We couldn't do a normal pale ale. The oats wouldn't let us. They made us throw Citra hops in the mash with them, and when that wasn't enough, they made us throw more in the boil, then even more while they cooled off.

IPA - New England / Hazy, 7.1% // Tasting Notes: Fresh Berries – Juicy Fruit – Candyshop Vibes Turn up the amp and let the room fill with Reverb, a hazy IPA featuring Pilsner Malt, Pale Malt, Flaked Oats, Golden Naked Oats and a touch of Rye Malt. This brew boasts a silky-smooth body with a gentle kick of rye spice and fruitiness. Hopped exclusively with Mosaic and Mosaic Cryo, Reverb bursts with bold notes of candied sweetness, bubblegum, and ripe berry fruit, all wrapped in a wave of dank, juicy goodness. Each sip rocks tropical intensity, leaving a resinous finish that lingers like your favorite track on repeat. Crack open a Reverb and let the good times roll.

IPA - Rye, 6.3% // Tasting Notes: Dank – Orange Citrus – Pine Werd up yo. Here at Werk Force we love our red IPA's. We brought this one back out of the playbook and loaded it up with fresh Centennial, Wakatu, Citra and Simcoe hops. The huge citus and dank notes pair perfectly with the light toasty malt flavor and rye spice. Some may say this is the perfect beer for the end of winter and rolling into cool spring evenings.

IPA - American, 6.8% // Double Dry Hopped West Coast IPA. Strata + Idaho 7 + Simcoe + Mosaic + Citra.

Stout - White / Golden, 6.5% // Abide with this decadent golden milk stout inspired by the Classic White Russian cocktail. This creamy concoction rolls in with rich waves of milk chocolate, silky milk sugar sweetness, and a bold kick of coffee. Despite its golden hue, it's as full-bodied as the Dude's favorite drink, with a smooth, velvety finish. Just like the Dude, this brew abides-and we're sure you will, too.

Bock - Doppelbock, 6.7%, 16.9oz // A beer that has a dominant malty taste. This beer’s origins in a monk’s recipe are reflected in its heartiness. The Pope of Beers, Conrad Seidl, describes it as: “Almost black with a very slight red tone, a sensational, festive foam and truly extraordinary fragrance that at first summons up visions of greaves lard. The first taste is of mild fullness with an accompanying coffee tone, which becomes more dominant with the aftertaste. There is very little of the sweetness that is frequently to be tasted with doppelbock beer.” The Ayinger Celebrator has been ranked among the best beers of the world by the Chicago Testing Institute several times and has won numerous medals.

Stout - Imperial / Double, 14.0%, 500ml // Huckleberry Pie-inspired Bourbon Barrel-Aged Imperial Stout. This past summer, as we celebrated the tenth vintage of Fundamental Observation, we offered a draft-exclusive sneak peek and it quickly garnered a spot among the top 3% of our highest-rated beers. It was clear this one deserved its moment, so we’re wrapping up the year with its first-ever bottled release! A slice of sweet nostalgia, this variant builds on the bourbon-barrel-aged, Madagascar vanilla-soaked foundation of Fundamental Observation, layering in vanilla granola and brown sugar to recreate the essence of a classic pie crust. Finished with juicy huckleberries and a delicate hint of cinnamon, it’s an homage to homemade comfort that’s as inviting as it is indulgent. Rich, velvety, and brimming with flavors that evoke warm memories of fresh-baked pie, transforms a beloved base into a dessert-inspired masterpiece.

He and the Black Ring team are known for their small-batch roasts, award-winning cold brew, and house-made syrups -- and they've been keeping our Production Team caffeinated since Bryan joined our team this summer! We’re thrilled to showcase the washed El Salvador - Las Lomas coffee beans Bryan selected and roasted. This coffee brings decadent flavors of toasted marshmallows, walnuts, semi-sweet chocolate, and baking spices to Darkstar November's base notes of burnt sugar, spicy rye, and oak.

Porter - Other, 5.7% // La Brett Porter est inspirée des anciens Porters londoniens, bières superstars des années 1800, qui étaient conservés dans d'immenses foudres en bois dans lesquels se développaient des levures Brettanomyces. Elle n'a pas été barriquée, mais co-fermentée avec notre Brettanomyces maison, et brassée à partir de magnifiques malts spéciaux anglais. Sa robe est noire avec une teinte ruby. We brewed this with our friends at Central Waters Brewing in Wisconsin, one of the premium producers of barleywine in the US. Despite our states being northern rivals, this is the perfect beer to drink with friends on either side of the Midwest border.

Stout - Russian Imperial, 14.1% // Parabola is always a beast of a beer, with intense flavors of black cherry, dark chocolate, vanilla and roast coffee—yet each annual release also bears its own subtle imprint. For this latest edition, we aged the beer for a year in 12-year Elijah Craig and 11-year Henry McKenna barrels. These coveted bourbon vessels imparted signature notes of charred oak, nougat, espresso and cinnamon, taking the Parabola experience to new heights.

Komes Porter reflects the history of brewing, referring to the 18th century tradition of brewing porters in the Baltic states. At their prime, Baltic porters represented one third of the market, which is the best evidence of their popularity. We offer you a well-balanced, dark, strong beer with a distinct flavour. Slow fermentation at low temperatures in open vats, coupled with long (at least 3 months) maturation have resulted in the beer’s character and complete, complex nature. Porter - Baltic, 7.3% // This beer drinks like the liquid form of a dark chocolate bar. Packed with roasted and chocolate flavors that give way for subtle notes of dark cherries, plums, and prunes. The beer finishes with a spicy hop character with enough bitterness to dry the mouth, encouraging sip after sip.

Schwarzbier, 5.0% // Don’t let the dark color fool you, our traditional German-style Schwarzbier is deceivingly light, with a subtle malt and roast presence. To us, we’d gladly drink this beer year round, but there is something about the warmth in the roasty chocolate flavors that pairs perfectly with snowy weather.

Bock - Doppelbock, 7.8% // The Munich monks invented the Doppelbock to sustain them during lengthy fasts, particularly during lent. This beer has a nice rich malty sweetness, deep flavors of molasses, caramel, and dark fruit finish with an earthy mineral quality. Lager - American Amber / Red, 5.9% // a ‘90s Brewpub-style Amber Ale. Enter Shaker, our ode to the American Amber Ale—and the “shaker” pint glass into which they were poured—that dominated so many brewpub tap lists in the boom of the 1990s. Let’s pay this foundational style its due. Brewed with 2-row, crystal malts and a selection of pre-2000s hops (no Citra here!), Shaker presents a quintessential “old school” profile: candied orange, biscuit, pine resin, grass, even some toffee. Bitter yet balanced. A complete reorientation of standards. We love it.

Red Ale - Irish, 14.5% // Rich and malty, with layers of lightly caramelized, medium, and highly caramelized dark malt flavors. These create the perfect balance with an alluring toffee and biscuity flavor, and a touch of roasty dryness in the finish. Sláinte!!!

But then we threw some dark matter starry eyes cold brew and will be in there so you and your jaded friends can get a little swervey and a little jacked up and discuss how to fix this broken down jalopy of a world.

Red Ale - Irish, 4.1% // A highly drinkable pint with approachable hop bitterness and enough roasted barley to deliver a beautiful red hue, Irish Tommy will satisfy from Bridgeport to Beverly and from Midway to South Shore.

Brown Ale - American, 5.3% //Don’t be scared off by dark beers! Toasted chocolate and caramel notes lead the charge in this beer tracing its roots back to 18th century England, but this American style brings a little more hop character to the show. Property rights, powdered wigs, brown ales… just like everything we took from the British, we made it better on this side of the pond.

Stout - Imperial / Double, 11.5% // Riding the waves of rich dark chocolate malt, a comforting breeze of sea salt and peanut butter wafts over, returning sweet memories of childhood. To date, our most luscious stout, Chimaera Cub, rested over 100 pounds of peanut flour and gave this decadent chocolatey malt base a boost with a generous dose of cacao nibs.

Red Ale - American Amber / Red, 6.0% // This American Amber Ale has dark shades of natural gold on full display. Moderate maltiness is balanced with a steady hop profile for a smooth yet complex flavor. Meanwhile, subtle notes of dark molasses and caramel hover right under the palate and really boost the overall composition.

Stout - Milk / Sweet, 10% // We took a rye milk stout base and aged it in Pikesville Rye Whiskey barrels. Rich fudge with a pleasant rye spice and barrel to cut the sweetness.

Stout - Imperial / Double Milk, 10.0%, 500ml // This Imperial Milk stout blends milk chocolate, malted chocolate, and cocoa. The body is full and decadent from the subtle addition of milk sugar. What else would you expect from the Goddess of love?

Strong Ale - English, 7.4% // Trappist beers tend to be named after the place in which the monastery is situated. We’ve called ours ‘Tynt Meadow’, to honour the link with the plot of land on which monastic life was refounded here in the Midlands almost two centuries ago. Being part of the great Trappist tradition, we’ve chosen to produce a strong dark ale, but one with a clearly English character. Tynt Meadow is mahogany-coloured, with a subtle, warm red hue, and a lasting beige head. Its aroma carries hints of dark chocolate, liquorice, and rich fruit flavours. The beer is full-bodied, gently balancing the taste of dark chocolate, pepper, and fig. It leaves a warm and dry finish on the palate.

We are proud to be stewards of that ancient tradition today, hand-crafting each batch of Dragon’s Milk Bourbon Barrel-Aged Stout in Holland, Michigan. The best liquid in our house is now yours. Roasted malt delivers notes of coffee and chocolate married with sweet undertones of vanilla and oak from a three month stay in bourbon barrels.

Unless, of course, they have a dragon…Crimson Keep is aged in bourbon barrels for one month deep within the Dragon’s Milk Cellar. The deep red color is evidence of being battle tested. A smooth, malt-forward flavor profile is highlighted by notes of toffee, stone fruits, and oak that lead to a pleasantly dry finish.

Barrel-Aged English Barleywine, 13.7%, 12oz 19 months ago we conceptualized a barleywine that would complement what has become one of our most sought-after beers, Arabesque. While Arabesque takes barleywine to the extreme utilizing a pretty complex grain bill and going on the high end of the SRM scale for color, we took a more simplistic approach with Kentucky Hugs. This more traditional barleywine is made up of maris otter base malt, with just three different caramel malts on top of it. Aged for 19 months in younger Heaven Hill bourbon casks, this barleywine is focused more on caramel and nuanced barrel character.

Barrel-Aged Imperial / Double Stout, 14.3%, 12oz A bit after brewing Kentucky Hugs Barleywine, we thought of an idea to pair it with a stout. When I got into brewing, I was absolutely captivated by the stouts and barleywines coming out of the beautiful city that is Chicago. For this project, I wanted to create a set that paired together that could introduce people to our barrel program. These beers are meant to be a little bit more restrained, slightly lighter on the palate, more approachable to a novice drinker, but still very much appreciated by our most hardcore fans. This stout is just that. Notes of chocolate, vanilla, tobacco, and American whiskey.

Bock - Hell / Maibock / Lentebock, 7.5% // A strong lager with a beautiful golden colour. A truly robust body is crowned with distinctive hop bitterness and stable dense foam. The long-term ripening of Czech hop varieties and the delicate malt taste ensure the excellent drinkability of the beer. This beer ages in the brewery cellars for up to 100 days. Stout - American, 6.4% // A dark, roasty Rye Stout with a luminously smooth texture returns from the early days of Revolution. Brewed for those who spend their lives getting into tense situations.

Scotch Ale / Wee Heavy, 5.2% // Collaboration with Chuck's Wood Fired Pizza. In 2010, Chuck won Best of Show at the Urban Knaves of Grain homebrew competition with this recipe. Now, we bring it to the masses!

Stout - Irish Dry, 4.5% // A traditional dry Irish stout. Named for our co-founder's grandfather, who, as the epitome of lucky, missed a flight on a plane that crashed as he traveled the world.

Red Ale - Irish, 5.0% // Irish Red Ale. Dance like no one is watching! Hanra's Marionette is brewed in dedication to the memory of a good friend and his sweet dance moves. A special beer made for St Paddy's Day, it is slightly caramelly. bready, and easy drinking enough to make sure you last through the whole pub crawl.

Stout - Imperial / Double, 12.5% // Like the balance between inertia and gravity, Orbital Velocity, our imperial stout with cacao nibs and crushed peanut butter cups, rides the line between chocolaty richness and gooey peanut butter goodness. It's big, it's rich, and it's like a candy bar in a glass.

Bock - Hell / Maibock / Lentebock, 6.7% // German Style Maibock

Rauchbier, 6.7% // Smoked bock lager collaboration with Chicago Culinary Kitchen. This beer is rich with cherrywood smoke, caramel, and campfire vibes - portion of the malt was hand-smoked in CCK's Kitchen!

Schwarzbier, 5.5% // A clean, slightly roasty dark lager, Brunswick Mum is something beautiful and unexpected.

Stout - Irish Dry, 4.7% // Our dry stout is low alcohol, dark, roasty, and bitter. The coffee flavors are balanced with the addition of caramel malts.

Stout - Russian Imperial, 12.0% // Darkness is a beer of fable and legend. Malty and intense, yet velvety smooth. This special edition of our massive Russian imperial stout matured in Elijah Craig bourbon barrels and Creative Oak French Oak. Stout - Imperial / Double, 12.5% // Rich, pillowy imperial stout that we collaboratively brew annually with Rocky Reef Brewing Company. This graham cracker packed mash was one to battle with but in the end yielded one delicious decadent stout. We roasted boatloads marshmallows over a campfire and added them to the kettle. We then let the beer rest in bourbon barrels. The resulting beer has smooth notes of bourbon paired with the rich chocolate and graham crackers. Finished with more roasted cacao nibs and Madagascar vanilla beans.

Belgian Strong Dark Ale, 9.2% // Originally called "Spécial," Rochefort 8 dates to the mid-1950s. The name comes from the original gravity in "Belgian degrees." Deep brown color; the flavor is vigorous and complex, with firm body to support the strength. The aroma has elusive notes of fresh fruit, spice, leather, and figs

Belgian Quadrupel, 11.3% // Dominant impressions of latte coffee with powerful chocolate aromas in the nose. The alcohol esters are enveloped with hints of autumn wood, citrus zest (orange, lemon) and freshly baked biscuits. The initial taste is sweetly sinful. Beer and chocolate trapped into one single glass, a liquid milky draught with a backbone of bitter malt. The alcohol warms the throat and, in the finish, you will pick up traces of cloves, citrus, orange and mocha. The heaviest of the Rochefort beers, the 10 is a quadrupel style beer and can be recognized by its blue label.

Belgian Tripel, 10.2% // First brewed back in 2004, Curieux was our initial foray into barrel aging. To make Curieux, we take our Tripel and let it age in bourbon barrels for six-to-eight weeks. Once that time is up, we take the beer out of our cold cellars and blend it back with a portion of fresh Tripel. The resulting rich, golden ale features smooth notes of coconut, vanilla, and a hint of bourbon.

Wheat Beer - Witbier / Blanche, 5.2% // Allagash White features a refreshing balance of citrus and spice. Wheat, coriander, and Curaçao orange peel round out the flavor of this pale straw-colored, hazy beer.

Wheat Beer - Witbier, 5.4% // Blue Moon Belgian White, Belgian-style wheat ale, is a refreshing, medium-bodied, unfiltered Belgian-style wheat ale spiced with fresh coriander and orange peel for a uniquely complex taste and an uncommonly smooth finish.

Belgian Tripel, 8% // Named Cinq Cents in 75 cl (25.4 fl.oz.) bottles, this beer, with its typical golden color, slightly hazy appearance and fine head, is especially characterized by its aroma which results from an agreeable combination of fresh hops and yeast.

Belgian Strong Dark Ale, 9.0%, 11.2oz // The Chimay Blue Cap, baptized "Grande Reserve" in 750 ml bottles is a dark Trappist beer with a powerful aroma, the complex flavor of which improves across the years. It was first brewed as a Christmas beer by the monks of Scourmont Abbey in 1956.

Belgian Strong Golden Ale, 8% // The gnomes of Fairyland are particularly fond of this golden beer. LA CHOUFFE, with its slight hoppy taste, combining notes of fresh coriander and fruity tones, is the drink which gives them their zest for life. At least, that's what these imps say when they are thirsty. Their secret used to be jealously guarded from one generation to the next until the day they shared the recipe with humans to seal their friendship. Of all the legends from the wonderful region of the Belgian Ardennes, the tale of LA CHOUFFE is the one which most merits re-telling.

IPA - Belgian, 6% // XX Bitter or Extra Extra Bitter is a blond, bitter ale containing 6% vol. Alc. It's famous for its very bitter and strong flavour. XX is made with pale pilsner malt and loads of Brewers Gold and Hallertau hop flowers. A perfect combination that has been nationally and internationally praised. This ale has been a real trendsetter for the current comeback of bitter ales in Belgium. Only whole leaf hops are used.

Belgian Strong Golden Ale, 8.5% // Duvel is a natural beer with a subtle bitterness, a refined flavour and a distinctive hop character. The unique brewing process, which takes about 90 days, guarantees a pure character, delicate effervescence and a pleasant sweet taste of alcohol. Apart from pure spring water, which is the main ingredient of beer, barley is the most important raw material. Barley must germinate for five days in the malt house, after which malt remains. The colour of the malt and as a consequence also of the beer is determined by the temperature. Duvel obtains its typical bitterness by adding various varieties of aromatic Slovenian and Czech hops.

Table Beer, 4.5% // Angle Trisector is a 4.5% Scottish table beer brewed with Scotch Common but hopped with Ernest grown by Hukins Hops in Kent. Ernest was bred in the 1950’s (by a guy called Ernest, fantastically) but has an extraordinary intensity of fruit character more typical of very recently developed cultivars.

Wheat Beer - Witbier / Blanche, 4.9% // 500 years of hard work went into making this beer that features the aroma of orange peel, coriander and herbs that the merry monks imported from sunny Curacao. Speaking of which: pouring Hoegaarden is just like letting the sun fall into your glass: light yellow and naturally murky. And the soft foam adds a cloudy finish. And then there’s the soft taste, light and slightly sweet and sour and with subtle citrus notes… ah, just go ahead and taste it instead of reading about it!

Belgian Strong Golden Ale, 8.5% // The allusion to pink elephants and the choice of names is not due to chance. With a particular character, the unique taste results from triple fermentation and the use of three different yeast strains. Sweet, biscuit malt backbone, supported by pleasant warmth and spice, finishes well rounded, floral, and dry. Color and Sight: Pale blond, the fine and regular sparkle creates a nice, stable foam head. Scent: Slightly malty, heavy touch of alcohol, spicy. Taste: A good shot of alcohol ignites in the mouth, as it were, which really warms the tongue and palate. The taste is also characterized by its roundness. The finish is strong, long and dry bitter.

Belgian Blonde, 6.6% // In the fifties, an extraordinary meeting took place that all beer enthusiasts should raise their glass of Leffe to. The abbey’s Father Abbot Nys became acquainted with Albert Lootvoet, a master brewer. Passionate about the future of the brewery, Father Nys was upset to have to witness how, since the unpleasant stay of the French revolutionaries, the brewery had slowly fallen into decline and had eventually had to close its doors in 1809. Such a magnificent place could not be forgotten, he believed, and he vowed to bring the Leffe beer back. Father Nys and the brewer set about the challenge with vigour…and succeeded.

Belgian Strong Golden Ale, 9.5% // A little magic and a lot of mischief. This time the gnomes brought more than just yeast from their Belgian farmstead Brasserie d'Achouffe! While Coop and the gnomes were spicing things up at the brewery, our brewers were carefully fermenting signature, fruity, spicy Chouffe yeast to create the flavorful unique blonde ale we all love! You’ll enjoy the smooth drinkability, fruity aromas and flavors, and warming finish. Malt: Pils, Carapils, oats, red wheat, special b malts Hops: Styrian Goldings

Pale Ale - Belgian, 6.2% // NOTE: The ABV-value of this beer varies, in the United States 6.9% is used. The Orval’s brewery produces only one beer to sell, a beer with a high fermentation that continues in the bottle. It is 6.2% ABV. This beer is brewed exclusively from spring water, barley malt, hop cones, candy sugar, and yeast. The aroma and the fine taste are due more to the hop cones and the yeast than to the malt that is used. What’s special about Orval’s beer is that hops are added at two different stages of the production process.

Belgian Dubbel, 7.6% // This Belgian style Dubbel, inspired by the likes of Westmalle and other classic Belgian versions, is a strong ale with a complex rich malty character and aromas. Rather than the usual continental hops and Belgian dark candi syrup, this beer is brewed with Piloncillo sugar.

Belgian Quadrupel 10.0% // The St.Bernardus Abt 12 is the pride of our stable, the nec plus ultra of our brewery. Abbey ale brewed in the classic 'Quadrupel' style of Belgium's best Abbey Ales. Dark with a full, ivory-colored head. It has a fruity aroma, full of complex flavours and excells because of its long bittersweet finish with a hoppy bite. (10,0% ABV) Worldwide seen as one of the best beers in the world. It's a very balanced beer, with a full-bodied taste and a perfect equilibrium between malty, bitter and sweet. One of the original recipes from the days of license-brewing for the Trappist monks of Westvleteren.

Winter Ale, 10.0% // This specialty beer is characterized by its deep dark colour, with a creamy, thick head and a full, almost velvety taste with a fruity nose. Brewed annually for the holiday season, the long winter nights are perfect moments to savour this ale with or without friends and to enjoy its unique, complex taste.

Pale Ale - Belgian, 6.0%, 500ml // Belgian-style Pale Ale brewed with Brettanomyces. Inspired by Orval Trappist Ale

Lambic - Framboise, 6.3%, Season 19|20, Blend No. 72, Bottling date: 01/07/2020 , 375ml // For this Hommage, we blended a kriekenlambik and a frambozenlambik in a forty-sixty proportion and with a final fruit intensity of 529 grams of fruit per litre of Hommage. The weighted average maceration time was five months, and we used both jonge and two-year old lambik from seven barrels and eleven brews. This bottle aged for a year in our warm room before its release. NL 3 Fonteinen Hommage is de trage maceratie van handgeplukte volle frambozen en krieken op traditionele lambik. Ongefilterd. Ongepasteuriseerd. FR 3 Fonteinen Hommage est la lente macération de framboises et griottes entières, cueillies à la main, dans du lambik traditionnel. Non filtré. Non pasteurisé. EN 3 Fonteinen Hommage is the slow and all-natural maceration of hand-picked whole raspberries and sour cherries on traditional lambik. Unfiltered. Unpasteurised.

Lambic - Kriek, 6.0% // 3 Fonteinen “Intens Rood” (Intense Red) is the result of macerating hand-picked whole sour cherries on lambic for at least six months, in a proportion of one kilogram of fruit per litre of lambic, and is then blended again with more lambic to obtain a minimum intensity of 450 grams of fruit per liter. The kriek lambic ferments in the bottle for at least another six months and develops into an intense wine-like fruit lambic. This bottle fermented, unfiltered and unpasteurised lambic is all-natural with no artificial juices, syrups, or sugars added. Traditional Lambic is living, cultural heritage rooted in the Zenne valley! 3 / Drie Fonteinen - Intens Rood (Intense Red) (375ml)

Lambic - Gueuze, 7% // bottling date: 30/11/2022 For this specific Oude Geuze, we blended lambikken from four different barrels and ten different brews. The lambikken were brewed by Lindemans for one half and the other half by ourselves. Half of the lambikken is two years old, and a small portion even four years old. This renders the weighted average age of the blend upon bottling to almost 21 months. 3 Fonteinen Oude Geuze is a blend of one-, two- and at least three-year old lambikken. Spontaneously fermented. Matured in oak barrels. Extended bottle ageing. Unfiltered. Unpasteurised.

Lambic - Kriek, 6.0% // 3 Fonteinen Oude Kriek is the result of macerating hand-picked whole sour cherries on young lambic for at least four months, in a proportion of one kilogram of fruit per litre of lambic. The kriek lambic is then blended again with more young lambic to obtain a minimum intensity of 35% fruit, and is bottled immediately afterwards. These bottles are then stored in our cellars for at least five months so that the kriek lambic can develop into a beautiful, traditional, and refined Oude Kriek. With a pleasant tartness and organic notes of almond and cinnamon as it warms in the glass, 3 Fonteinen Oude Kriek, will age perfectly but may lose some of the vibrant red colours and forest fruit aromas. This unfiltered and unpasteurised lambic is all-natural with no artificial juices, syrups, or sugars added. Traditional Lambic is living, cultural heritage rooted in the Zenne valley!

Farmhouse Ale - Saison, ?% 500ml // Barrel-aged blonde saison with a combined ~4lbs/gallon of blackberries, blueberries, and cherries.

Lambic - Gueuze, 7% // Traditional blend of young and old lambics. Fermented, aged, and bottled on the farm.

Lambic - Other, 7% // Blend of young and old lambics with a farmhouse saison from our friends at Brewery Nevel. This oat saison was brewed in August and aged for 8 months in lambic barrels. Fermented, aged, and bottled on the farm.

Farmhouse Ale - Saison, 8.5%, 375ml

Farmhouse Ale - Saison, 8.5% // A traditional Belgian-style farmhouse ale, the perfect combination of elements came together in their #7 fermenter. You could call it fate, but they called it Tank 7, and so it is. Beginning with a big surge of fruity aromatics and grapefruit-hoppy notes, the flavor of this complex, straw-colored ale tapers off to a peppery, dry finish.

Farmhouse Ale - Saison, 5.8% // A variant of the Belgian “Wit” or “Blanche” style, but a little drier and considerably more flavorful, Darbyste is a saison made with wheat and fermented with fig juice. Cloudy and medium amber in color, it offers fruity aromas with lots of tartness and funkiness. Not surprisingly, the aroma smacks of figs, with notes of raisin, pear and red grapes rounding things out. Some brown sugar on the nose as well. On the palate, things get quite interesting.

Farmhouse Ale - Bière de Coupage, 8% // An evolution of the very first Wadesda, a blend of Jambe-de-Bois and Cantillon lambic, making the Wadesda #9 a Tripel Saison: a stronger version of the original Saisons. She is amber in colour and has those typical characteristics of Lambic: woody with a strong funky nose of Brettanomyces, with quince and fallen apples. This is followed by white flowers, old kirsch and persimmon, and even a hint of curry leaves. A very winey character, as it should be! All of this blends perfectly with the classic aromas of tripels, like pears and bananas. Her strong alcohol percentage enhances her vinous qualities and gives a certain roundness to a finale that is quite dry and almost mineral. Intoxicating and complex, but refreshing and drinkable!

Fruit Beer, 8.0% // The gnomes love Achouffe beers and the juicy cherries which grow in their magical land. Every year they gather and store them in the attics at the brewery. One day, after an abundant season, the floor gave way under the weight of the harvest, and some cherries fell into the Mc CHOUFFE brewing below. Impish as ever, the gnomes kept quiet about the incident. Surprised to discover a glowing, ruby-tinted beer with a fruity taste, the master brewer decided to bottle it up. Enjoy Cherry CHOUFFE carefully to avoid staining your beard and always drink it in delightful company.

Farmhouse Ale - Saison, 7.0% // Brewed with 100% Pilsner malt, French Strisselspalt and Hallertau Blanc hops, and an expressive Belgian yeast strain, this beer is a rustic expression of straw and hat, grass and white grape aromas, while open-fermentation nurtures the notes of bubblegum and black pepper. A bright and dry beer for the new season.

Wild Ale - American, 7% // Pathfinder is beer number 13 in our Barn Quilt series. Seasonally inspired, this beer consists of a tart, oak-aged saison that was aged on a modest amount (1lb./gallon) of cranberries and then conditioned on spruce tips before packaging.

Lambic - Fruit, 6% // Perzik is a spontaneously fermented beer adhering to the Méthode Traditionnelle standard. It was aged for 18-30 months in used French oak barrels before being refermented on over 3 lbs/gal of yellow and white donut peaches from Door County, WI.

Lambic - Gueuze, 5% ABV

Farmhouse Ale - Bière de Garde, 4.3% // The counterpart to our Spring Saison “Cloud Buster”, this follows the same Nelson Sauvin hopping strategy and uses the same exceptional Omega yeast “Saisonstien’s Monster” but adds a touch of gently roasted malts to match the darker days of the season.

Farmhouse Ale - Saison, 6.1%, 500ml // Volume XVIII revisits our original pairing of ripe peaches from Mick Klug Farms and a strain of Brettanomyces Bruxellensis known for its characteristics similar to white wine like Chenin Blanc and Pinot Gris. This time around we allowed for much longer contact time with the peaches and extended conditioning once bottles. This extended process time yields a beer that has more depth and complexity to it's funkiness while remaining delicate and allowed for a subtle, quenching acidity to emerge.

Every ingredient we used was made, grown, or processed within 150 miles of our brewery. Pilsner malt from Caleb at Sugar Creek Malt. Raw spelt berries from Jill at Janie’s Mill. And, Cascade hops that were picked less than 24 hours before we used them by our friends at Hop Head Farms. Notes of raw coconut, apricots, white grapefruit, pineapple sage, juicyfruit gum, and white pepper lead to a finish that almost floats away with aromas of freshly baked bread and peach preserves. A beer that captures time, place, and connection in liquid form.

Brewed with aged hops, unmalted spelt from Janie’s Mill and brettanomyces bruxellensis. Notice notes of overripe peach, honeydew, orchids, freshly mixed bread dough, guava and lovingly restrained funk.

Fruit Beer, 6.1% // The Finer Points of Bad Behavior is an ever evolving series of beers that pairs seasonal ingredients with unique strains of yeast specifically chosen to compliment, contrast, and elevate each other. Volume XIX pairs cranberries from Mick Klug Farms and Brettanomyces Bruxellensis. This pairing results in a brilliantly red beer with notes of bright cranberry, orange rind, the suggestion of thyme, a touch of earthy leather, and is tart with a tight structure that is laden with cranberry tannins.

Farmhouse Ale - Saison, 4.9%, 500ml // Saison made in collaboration with Goldfinger Brewing featuring Bison grass

Farmhouse Ale - Brett, 4.9%, 500ml // Le Bizon is a collaboration with our friends at Goldfinger and an homage to the flavors of Poland. It was hopped with Polish varieties Izabella and Oktawia and whirpooled with dried bison grass for aromas and flavors of vanilla, baking spices, honeydew, fresh cucumber, dried lime, and white pepper with a well structured and lightly acidic finish. A great pairing for dense rye bread covered in butter and pickled herring, or chased with a pickled cucumber. Brewed with Bison Grass and Brettanomyces

Farmhouse Ale - Saison, 5.1%, 500ml // We teamed up with our friends at Hop Butcher to brew Country Beer — a quaffable, provisions-worthy beer made with pilsner malt, crystal rye, spalter select & NZ cascade hops.

Lambic - Gueuze, 6.3% ABV

Wild Ale - American, 6.1% // Slumbering for 18 months, Ghosts in the Forest is a blend of beer from The Lost Abbey Oak Foeders and a few select French oak barrels. This blonde sour focuses on the complexity of Brettanomyces and oak. “When we first got these massive Foeders, we knew we were going to have to be patient and let the oak work it’s magic” said Tomme Arthur, COO and Co-Founder of The Lost Abbey. “We’ve since added 3 additional vessels, creating our own “forest” and we’re really excited to start to blending these beers into future creations.”

Farmhouse Ale - Saison, 5% // Spelt from Meinklang Farm combined with local barley & wheat, hopped with Hallertau tradition and Saphir, and fermented with a rustic farmhouse ale yeast. The project started with the idea, how can we combine the farmer and the brewer? We felt together a need to push for the necessary transparency in brewing and create a space where the brewer can connect with the farmer and the grains. Through that, we believe, we can brew a more holistic and complex beer. We also believe that a beer can communicate the information of a place. Deep rooting grains, biodynamically farmed in the lowlands of Austria at the @meinklang_farm. Combined with locally sourced organic ingredients, we strive to bring a place to live through our beers.

Farmhouse Ale - Saison, 6.5% // When you brew as much as we do, sometimes we get tired of telling the yeast what to do. For Apex Predator Farmhouse Ale, we pitch the yeast cold, turn off the temperature control, and let the yeast do its thing. To our delight, it spat out the sweet scent of juicy fruit wafting from a frothy, white mane. Brewed only with grain and sugar unencumbered by the heat of the kiln, we create a hazy, golden body. Apex Predator gets its teeth from a generous Crystal dry-hopping that completes the dry finish with a fruity bite. Pounce on the opportunity to let it part your lips and you may find yourself at the top of the food chain.

Lambic - Other, 5.3% // Weird Era is our blend of Lambic inspired oak fermented ales ranging in age from 1-3 years old, or Methode Traditionnelle. Mashed with pilsner malt & unmalted wheat, it was boiled for three hours with aged whole cone hops before being cooled overnight in our coolship, & transferred into French & American oak barrels the following morning. A poignant gaze into time & place, this beer showcases four specific nights in South City St Louis. This blend is comprised of twenty-five percent three year old spontaneously fermented beer brewed on January 17th, 2019, twenty-five percent two year old spontaneously fermented beer brewed on April 20th, 2020, and fifty percent one year spontaneously fermented beer brewed on January 19th, 2022 - then packaged into green glass bottles on August 2nd, 2022 where it has been conditioning since.

Lambic - Gueuze, 6% // Effectively Seasoned is a multi-year ensemble with an average age >46months at bottling. This amalgamation includes a puncheon of our favorite Colorado Méthode Traditionnelle spontaneous beer from every brew season we have engaged in thus far, and is an equal fusion of six brew years (16|17, 17|18, 18|19, 19|20, 20|21 and 21|22). Given our excitement for unobfuscated terroir, Effectively Seasoned resides as our favorite fermentation project to date. Our "Copper Blend" has Champagne-like brioche and nutty qualities, notes of toasted orange peel, burnt caramel, and musty oak cellar, and showcases restrained acidity, pleasant bitterness and tannic structure that is ready for enjoyment now but is designed to age gracefully. Bottled July 2022.

Farmhouse Ale - Saison, 6.5% // Saison Dupont is a world classic beer and the yardstick for one of Belgium’s most important beer styles. It is the most admired AND imitated Saison in the world. A strong, vital yeast is key to full attenuation and thus to the style. Saison Dupont is straw colored with a dense creamy head. The nose is alive, like fresh raised bread, estery with citrus and spice notes. Full-bodied and malty, it sparkles on the palate and finishes with a zesty hop and citrus attack. Incredibly compatible with food!

Lambic - Gueuze, 7% ABV // GUEUZE TILQUIN À L'ANCIENNE – CUVÉE PAUL was blended on 2 March 2022 in honor of Paul Tilquin (1909 - 2005), grandfather of Pierre, with 30% 1-year old lambics, 30% 2-year old lambics and 40% 3-year old lambics, all matured in oak barrels. Unfiltered and unpasteurized, this beer was refermented and matured in the bottle for 1 year. It is part of our Family Tree Project: a different blend for each member of the Tilquin family tree.

Wild Ale - Other, 8.2% // Silhouet is a special blend of wild ales aged for 2 to 5 years in oak barrels, and a rustic saison. 5 year old Hallertau Mittelfrüh hops were used. The outcome is a beautifully balanced beer which marries the complexity of aged, characterful wild ales with the fresh and aromatic qualities of a saison. Tasting notes: poached peaches, apple skin, black pepper, cherry pie and oak.

Wild Ale - Other, 7% // A blend of wild ales (aged for 1 up to 4 years) with organic plums.

Farmhouse Ale - Saison, 6.8% // Tasting Notes: Fresh Orange Zest – Lemon – Juniper Berries Our latest twist on our classic Farmhouse Vultures saison series. Aged for 12 months in freshly used Koval gin barrels. Post barrel we continued to rest it on ginger, orange and lemon zest and juice. Huge notes of fresh citrus pair with juniper berries and botanicals from the gin barrel. A super refreshing and effervescent saison yet nuanced with layers upon layers of flavor that develop as this beer warms in the glass.

Sour - Fruited, 5.3% // Mandarin orange, pineapple, sweet cherry, banana, coconut cream pie, marshmallow & yogurt.

Sour - Fruited, 4.4% // Fermenter-Soured Ale With Cherry

Sour - Berliner Weisse, 4.0% // A kettle-soured Berliner Weisse with a sharp puckering tang and aromas of lemon zest and sourdough bread. This golden delight was dubbed the ‘Champagne of the North’ by Napoleon’s troops due to its effervescence and similarities with the famous sparkling drink. We like to think of it as a perfect introduction to sour beers as it bears similarities with both wine and cider.

Sour - Fruited, 6.0% // Fruited Sour Ale with Strawberry Purée and chewy Pink Square Candy. Contains lactose.

Sour - Flanders Red Ale, 6.2% // Duchesse de Bourgogne from Brouwerij Verhaeghe is the traditional Flemish red ale. This refreshing ale is matured in oak casks; smooth with a rich texture and interplay of passion fruit, and chocolate, and a long, dry and acidic finish. After the first and secondary fermentation, the beer goes for maturation into the oak barrels for 18 months. The final product is a blend of younger 8 months old beer with 18 months old beer. The average age of the Duchesse de Bourgogne before being bottled is 12 months.

Sour - Other Gose, 5.2% // The tart, citrusy flavors of a DESTIHL gose ale combine with the unmistakable zesty, garlicky flavor of a Suckerpunch dill pickle to create a uniquely delicious, knockout flavor experience. Cheers!

We teamed up with our pals at Waggle to craft the perfect pre-round pick-me-up, loaded with concord grape, lime, cara cara orange and ginger ale. The wheat body is accented by a hefty dose of pink Himalayan salt to pair perfectly with tequila... and tacos.

Sour - Traditional Gose, 4.7% // RITTERGUTS GOSE (11.5°P) is the oldest existing, most authentic Gose in the world. We still brew this unique beer in the old-fashioned, original way, using genuine Gose yeast, coriander and salt. Ritterguts Gose's refreshing characteristics are developed through a secondary lactic fermentation, which produces a round and harmonious acidity. Its rare, classic open fermentation and long, cold maturation make it exceptionally well-balanced, the way a real Gose was meant to be. Brewed with grapefruit and a mysterious hop code named “Experimental Grapefruit”, this IPA is a serious citrus bomb. Gluten-Free, 5.5% // A classic NW style IPA, golden in color with complex hop aromas of citrus, mango and pine. Sturdy, yet light bodied with a dry finish. A project beer with The Mountaineers, built on a spirit of wonder and a sense of adventure.

Gluten-Free Blonde, 4.5% // Easy drinking, crisp ale, with a Pilsner-like finish. The aromas of melon & sweet rice shine alongside Perle hops.

Gluten-Free Witbier, 4.5% // A hazy golden body capped with a snowy head. A wintry burst of juniper and citrus, on an updraft of Belgian-style aromatics. This beer was our “Everest”–a proper witbier, without wheat or barley! Through a feat of determination worthy of a mountaineer, we proved it was possible, and now we invite you to join us on the Summit.

Gluten-Free - Pilsner, 5% // New Grist is a one-of-a-kind beer brewed without wheat or barley: one of the first beverages of its kind that can be enjoyed by those on a gluten-free diet. It is the first gluten-free beer to be granted a label approval by the U.S. Government. Each Batch we brew is tested for its gluten content before it is bottled and shipped. New Grist is brewed from sorghum, rice, hops, water and gluten-free yeast. These ingredients combine to form a crisp, refreshing session ale brewed for those with celiac disease, or anyone with an appreciation for great tasting, handmade beer. It pours a brilliant gold color, with a bubbly head, and light, fruity aroma. The flavor is crisp and refreshing, fruity and smooth. Hints of green apple slice through the maltiness of the sorghum, making this an extremely quaffable beer.

The project is a multi-tiered project focused on providing education, networking opportunities, and support for those in craft beer that identify as women, non-binary, or transgendered. This cider blending session included 40 participants from breweries and shops across Chicagoland and Milwaukee area.

Cider - Traditional / Apfelwein, 6.5% // Pale gold, light, bubbly, with a stroke of sweetness along with the tart, bitter, and fruity elements that good hard cider offers. A clean, light "quaffing" cider, but don't put it away it too fast! Alcohol content 6.5% by volume. Available in 750 ml bottle with crown cap or 5-gallon keg. Our Farmhouse recalls the refreshing, low-alcohol "ciderkins" or "small ciders" of centuries past. Cooling in summer, warming in winter, and companionable with most foods.

Mead - Melomel, 13% // X2 is a reimagined version of a mead of yesteryear called Mead X. Last made in 2018.

Mead - Melomel, 15% // Tangerine mead with vanilla and lactose aged in Gran Marnier barrels for 18 months.

Mead - Melomel, 18% // Bourbon Barrel Aged SBVL was made in collaboration with Chicago’s own More Brewing. Modeled after their Strawberry Banana Marbles brew.  We made this particular product back in 20’. It features strawberries, bananas, lactose, and vanilla beans. We then placed the product in a freshly emptied Blantons bourbon barrel for nearly 2 years.

Cider - Sweet, 7.2%, 375ml // This apple is perhaps America's most important heirloom, celebrated and grown from coast to coast. It tastes like guava, passion fruit, marzipan, and honeysuckle. It is tart, lush, and fruit forward. 100% Golden Russet apples from CiderView Orchards. 2023 Vintage This cider is medium.

Cider - Sweet, 6.3%, 375ml // Porter's Perfection is a famous English cider apple that produces many siamese twins and triplets, conjoined apples throughout the orchard. It tastes like pineapple, guava, passion fruit, lemon zest, with a kiss of tannin. 75% Porter's Perfection apples from CiderView Orchards, 20% Northern Spy, and 5% Golden Russet apples from Uncle Johns.

Cider - Traditional / Apfelwein, 6.0% // JK'S Organic Scrumpy is slowly fermented from organic apples and natural yeast. The apples are 100% grown in our Michigan orchard. The same orchard has been in our family for over 150 years. This cider saved our farm during the Great Depression. We now produce it legally so you can appreciate it too. There will be slight variations from batch to batch, just as nature makes no two apples alike! Enjoy our authentic Estate bottled American Farmhouse Scrumpy cider with its fresh, juicy apple aroma and crisp, clean finish.

Intensely fruity with balanced acidity, a complex flavor profile and an earthy aroma, this mead is reminiscent of picking fruit on a mid-summer day. A strong option for the cellar, blackberry will continue to mature and develop in the bottle for years. Blackberry pairs well with creamy cheeses, duck, and veal.
