The vines are up to 60 years old and planted on steep hillsides at around 1,300 feet of elevation. The soils are mainly clay with small amounts of limestone. Ezio's vineyards stand out in the area because of how green and lush they remain when all his neighbors sites have turned to brown. Wildflowers and native grasses grow in between the vines to promote biodiversity and to provide vital nutrients to the soil.

From the producer: A savory nose showcasing some of Syrah’s meaty characters alongside blueberry, raspberry, forest floor, brut cider, and garden herbs. Vineyard Notes: The Syrah portion for this wine came from Hunter Hill just above Soquel in the redwoods of Santa Cruz, and the Chardonnay portion came from Amaya Ridge just a little further into the mountains. Both were farmed organic and dry farmed. Both yields were rather small, so we tried an experimental style coferment.

"Show me a fanatic and I’ll show you a success," goes the saying, and truer words could not be said about Quentin Bourse – the “Idiot Angel” of Azay-Le-Rideau. While that is the rough translation of the name of his label, Le Sot de L’Ange, he is a far cry from anything remotely resembling an idiot. His relentless work ethic, innovation, and borderline obsessive perfectionism result in meticulously crafted, serious wines. 'Le Jardin' is made from 100% Côt from an interesting plot with two distinct soil types: one section with clay and silex soils and another with clay and limestone. Deep, dark, serious, and structured without being overly heavy - this is a stunning example of a serious red from a natty winemaker that has nerve and shows notes of black cherry, tart plum, and silky tannin.

It has the beguiling scent of a flourishing, botanical garden. The mouthfeel is mischievous but, at the same time, showcases the humility of a Burgenland farmer.
$52.00Mersel Wine - Phoenix Rose 2021
The name 'Mersel Wine' comes from the region Maksar Mersel, which is the highest viticulture region in Lebanon, located between the Cedars and Ainata El Arz at an altitude ranging between 2,000 and 2,400m. They also have vineyards in Ainata in the Bekaa Valley, Dimane and Bcharre in Wadi Qannoubine, and Bousit in Northern Lebanon. The wines are made naturally, with very little to no sulfur additions - unfiltered and unfined - grown using organic farming methods, resulting in simply: fermented wine. Eddie Chami, the winemaker at Mersel Wine, was once also one of the winemakers at Couvent Rouge. He holds a degree in Viticulture and Enology from UC Davis, California. His passion is to develop wine using local Lebanese indigenous grape varieties but something not common locally. Mersel Wine is the first to develop a Piquette and PetNat and he has been dabbling with skin-contact wines since 2016.

The wine is pressed and skins are left with the must for 4-5 days so this is a skin contact or orange wine of deep, exotic fruit, great texture medium to full intensity. full intensity.

From the producer : In 1999, La Livinière (meaning “place planted with vines”), located in the heart of the Minervois between Toulouse and Montpellier, became the first vineyard to receive recognition in the Languedoc region. Château Maris covers 45 hectares of land, divided into a multitude of plots on the hillside above La Livinière. It received Ecocert certification in 2002, then Biodyvin in 2004 and Demeter in 2008.

Robed in bright vermillion and with an aroma reminiscent of fresh cherry pie, our Kriek is a Pacific Northwest ode to Belgian Lambic brewers who craft these tart, fruity and complex beers, one of our favorite Belgian styles. Beginning with our aged, Lambic-inspired, blonde base, we added a mountain of of whole, organic, Oregon-grown, Chelan cherries to the final blend. In addition to the wonderful cherry flavor and lovely color, the fruit adds a yeast complexity by adding more microbes to the beer and kicking up another fermentation. We finished the blend with just a hint of local wildflower honey to balance the acidity and add one more level of nuance.

After a few year hiatus, we're thrilled to return to our spirits-barrel cuvée for the third time. Where most of our bourbon-barrel-aged beers are selections of barrels from the same base style, Rackhouse Reserve is an exercise in creating a blend of different base beers. Our goal of course is to highlight the barrels, but in this instance we also want to craft a unique and interesting blend of beer styles. After laboring through the task of tasting all the barrels in our rackhouse, or cellar of spirits barrels, we selected a variety of different ales and barrels for the final blend, culminating in a harmony of warm flavors reminiscent of caramel, toasted marshmallow, spicy oak and dark chocolate.

Blended Gose Fermented in Oak: Hayton Farms 2023. Ghosts of Goslar is a blend of goses fermented in oak from stock brewed in August 2022 and May 2023. This blend consists of two different stock barrels and was bottle conditioned with a neutral wine yeast. Barrel #1 – Gose base with coriander, hopped with aged Hallertau Tradition and fermented with a mixed culture in a Washington Cabernet Franc barrel. Refermented with a brettanomyces blend in a Washington Grenache barrel on Hayton Farms tayberries. Barrel #2 – Wheat base ale with lemon and coriander fermented with a mixed culture in a neutral red wine barrel. Hopped with Hallertau Mittelfrüh and Cashmere.

Bottling date: 27/01/22. For this Druif, we macerated muscaris grapes, picked at Hoenshof in the summer of 2021. We macerated the grape must on two- and three-year old lambikken. Maceration took almost four months before blending and bottling. This brings the weighted average age of the blend to more than 22 months. The final fruit proportion is 396 grams of muscaris grapes per litre of Druif. Of all brews, more than a quarter was brewed with Pajottenland grown cereals. 100% 3 Fonteinen-brewed lambic. 3 Fonteinen Druif maceration of grape (must) on / the co-fermentation of grape juice or wine with traditional lambic. A little touch of pilsner malt here, a little push of German and American hops there, caressed very gently layer after layer after layer. There are no limits here. Weyermann Pilsner Malt and hopped with a blend of Magnum, Saaz, Mandarina, Citra, Mosaic, & Strata.

Pre-Pro Pilsner w/ Rye. The inspiration for this beer goes back - way back - to the days of pre-prohibition, when lagers were a little more chewy, and spicy, and rustic, and probably not that great if we’re being honest because this was like 100 years ago and stainless steel wasn’t widely available and they didn’t sanitize equipment like we do now. ANYWAYS - this beer is kinda like that, but not really, as we took even more liberties by using a substantial portion of rye in this grist. Why’d we go that route? CHARACTER. Like, extra spicy/floral/gritty OOMPH. And we hopped it with Saaz and Tettnang because that’s what we like in our lagers (and those varieties DID exist 100 years ago). Plus, we kept the abv in check so we could throw back a few, easy peezy, like the good old days, and remember every moment on the nights with chew.

The tank was tracked for approximately two and a half months, then run into our blending tank for hand bottling when ready. We further conditioned this beer in bottle for approximately five months. Good beer is all about smooth transitions. When this Mixed Culture Sour brewed with Wild Cherry Blossom Yeast was nearing completion, we knew we needed to execute the perfect transition. That’s why months ago, one summer morning right before sunrise in the R&D Brewery, our head brewer could be found playing soothing folk ballads on a hammered dulcimer while all the brewers lined up across the cellar with handfuls of the finest, fresh Balaton Cherries. One by one, the brewers eased the cherries into the Mixed Culture barrels. This of course resulted in the smoothest, most melodic transition. And lo! a bright, tart, subtly funky cherry red saison was born. Pass the Balaton was conditioned on loads of Balaton Cherries. The spicy Saaz hops were hand-selected by Kevin and Lisa, and the HM crew added some HBC 1134, an experimental hop geared toward modern lagers that has awesome herbal and citrusy notes. Regardless of whether you're in the classic or modern lager camp, this beer is insanely drinkable and delicious.

La Vipera is brewed with a simple base of pilsner malt and is heavily hopped with Tangier, a new hop we’re really excited about, grown by the awesome folks out at @segalranches. Tangier was used generously in the kettle and again as a dry-hop during fermentation. Lemon and orange pith in the aroma and flavor, this beer is easy drinking and refreshing.

Our Congruity series harnesses the art of blending and collaboration to create a beer that transcends its individual elements. In May 2022, we invited our esteemed friends from Bofkont and Tommie Sjef to join us in Copenhagen along with base beer from what they considered to be their finest barrels, and we contributed a special blend of our one- and two-year-old Danish Wild Ale. A methodical blending and tasting session followed, where we eventually found a blend that cohesively showcases the best of each of our beers. This portion of the blend was aged in Premier Cru wine barrels from Bordeaux for 16 months before bottling, infusing the beer with robust red wine notes.

Glimmering Grove is a celebration of ripe summer stone fruits plucked fresh from the tree. Its journey started with a base blend of one, two and three-year-old Danish Wild Ales aged in Chardonnay and Monbazillac barrels. We macerated this with over 600 grams of the finest Bergeron apricots and Tiffany white nectarines from France per liter of wild ale. The final blend features two-thirds apricot and one-third nectarine wild ale, resulting in a harmonious union of sweet and tart that captures the sunlit vibrancy of a summer orchard.

This beer is a blend of 75% two-year-old Danish Wild Ale macerated with fresh Riesling grapes from the Mosel wine region in Germany and 25% three-year-old Danish Wild Ale macerated with Pinot Noir grapes from Rhodt unter Rietberg, Germany. We carefully crafted this blend to evoke the pink hue, mild tannins and delicate fruit flavors of European rosé wines. The final blend was then aged in stainless steel to achieve a deeper and more harmonious wine character. Like a fine wine, this beer is an excellent candidate for extended aging due to its high proportion of German Riesling grapes.

Our Sunstead series captures the essence of perfectly ripe stone fruits, allowing us to savor the warm flavors of summer all year long. The base beer is a blend of one, two and three-year-old Danish Wild Ales aged in white wine barrels. We racked this onto freshly destoned and crushed white Saturn peaches at a rate of over 600 grams of peaches per liter, and left it to macerate with the fruit for over a month before bottling. This complex, soft and juicy beer tastes almost like biting into a fragrant peach, transporting you back to the high days of summer no matter when you drink it.

Praying Mantis is a Bourbon Barrel-Aged Imperial Stout made from a select blend of four exceptional bourbon barrels: three from Woodford Reserve and one from Heaven Hill. During our tastings, these four barrels stood out, earning high marks for their spirit quality, chocolate character, and unique flavors like vanilla, wood tannins, and caramelized sugar. To enhance these flavors, we added a generous amount of vanilla beans from Indonesia, Comoros, and Madagascar, allowing them to infuse the beer over time. The result is a special, balanced bourbon barrel-aged imperial stout that’s both classic and modern.

Our family regularly visited Chawton, the once home of Jane Austin, and January was always a special visit. Our friend Jermey Knight would ring us up and invite us out for a walk to enjoy the fields of these freshly bloomed flowers. It became a cherished annual event. This year's rendition focuses on two lovely hops Galaxy and Citra. This particular batch of Galaxy is very expressive with passion fruit and pineapple at the forefront. In combination with Citra a medley of tropical and zesty fruit resulted. We backed it up with just enough bitterness to invite the next drink. Enjoy!

Sprøng is a blend of mature wild ales, aged in oak puncheons (400 and 500L) for around 1,5 up to 3 years, and a barrel fermented and aged saison type of beer, which was dryhopped for a few months with Saaz hops. We’ve added Sicilian sage and also wormwood (artemisia absinthium and another secret variety) to the final blend to macerate a week before bottling. It’s a subtle addition we made compared to sprong, to add a slightly earthiness and spice to it.

The harvest season in spain goes from october to january. Sizzle is harvested between the end of november until the beginning of jan, when the olives are at their most ripe. They've grown bigger, jucier, and have turned dark green or purple. When pressed, these plump olives yield much more oil than during the early harvest. That oil much more mellow, but still packed with flavor. We recommend using sizzle with anything you're cooking or heating up!
