Iron Goddess of Mercy is synonymous with Ti Kwan Yin (which is also the name of the cultivar). Our Organic Asanoka is single estate and grown in volcanic ash based soil by the Kawaji family. Kawaji-san takes extra care with his tea fields, growing his plants with a special fermented organic fertilizer that he makes himself. The region of Kagoshima where it was grown has a high temperature difference between day and night which helps the tea develop a deeper flavor that is vegetal and umami with a light sweetness and without much bitterness.

Matcha is a Japanese, shade-grown green tea renowned for its extremely high levels of L-theanine, caffeine, EGCG, and antioxidants. Matcha is harvested in early May, consistent with the tradition of plucking this umami masterpiece on the 88th day after the start of spring. The tea is then steamed, consistent with most Japanese tea, for about 20 seconds. Following drying, the tea is now considered Tencha, which is milled by two large, flat granite stones producing our beloved Matcha, which has the appearance of a very fine powder.
