This is made from our New Zealand Ora King Salmon "Kobe beef of the sea". The salmon is cut into logs, cold smoked for hours, then cured for 45 minutes in a salt/water solution. We then roll it in our toasted pastrami spice (toasted coriander, black peppercorns, mustard seeds, paprika, garlic, and onion powder). The final step is to sous vide it at 104 degrees for 1 hour. Also the feta cheese that we garnish it withisone of the best in theworld from Yarra valley Australia from goat milk.
