Vegan/GF. Celery, carrots, and onions are sauteed in oil. Garlic, and red and green bell peppers are added along with water, fire roasted tomatoes, corn, fennel, oregano, thyme, rosemary and diced zucchini. It is served topped with just-wilted spinach.

Sliced crimini, shiitake, and oyster mushrooms are browned in olive oil. Diced shallots, leeks, and garlic are sauteed in butter until soft. Wine is added, then flour. Homemade chicken broth is stirred in along with cream and whole milk. Bay leaves and sprigs of thyme are added. The browned mushrooms are returned to the pot and the soup simmers until thickened.

Sliced onions are slowly cooked in olive oil until soft, pale and gold. Diced hot chilies and ground paprika are stirred in. Cubes of beef are browned on all sides, and added to the onions. Flour is sprinkled over, then dried porcini mushrooms and their soaking liquid, diced red peppers, plum tomatoes, white wine, and caraway seeds are added. When it comes to a bubbling simmer, the stew is transferred to the oven and baked at a low temperature, undisturbed, for an hour and a half. Sour cream is stirred in, and it is served over a bed of noodles.

Local salad greens, toasted walnuts, roasted local beets, and crumbled feta are served with a house-made sherry vinaigrette.

Roasted garlic-basil mayo is spread on Borealis Bread, and topped with portobello mushrooms which have been sauteed in butter and balsamic, parmesan cheese, and slices of tomatoes. Into the press it goes until it is toasty and delicious.

GF/DF “This soup may not be beautiful, but it sure is good.” Onions, celery, carrots, parsley, a whole chicken, and a cup of brown rice are thrown into a pot with water, and simmer until the chicken is tender. The chicken is removed; the meat is shredded and returned to the pot. Comforting, and delicious!

This is a hearty version of the classic Indian tomato soup, with red lentils added. Onions, garlic, and cilantro stems are cooked in oil. A freshly toasted and ground spice mix of coriander, cumin, black pepper, chile, fennel, and fenugreek is stirred in. Pureed tomatoes, red lentils, turmeric and lemon juice are added. The soup is finished with fried curry leaves and mustard seeds, and is garnished with cilantro.
