The NV Un jour de 1911... is another 100% Bouzy Pinot Noir with an ancient label design. The shining golden-colored cuvée combines ripeness, complexity and finesse with intensity and elegance on both the nose and palate. It's a powerful and rich yet very fine and balanced Champagne with great freshness and complex length. It is juicy and intense but also highly delicate, and its mineral tension and persistent finish make it a first-class wine for elaborate dishes. A great Champagne, with a label that doesn't give any more detailed information regarding vintages or disgorgement date, but we know it's always a 50/50 blend of three vintages (including one great millésime at least 10 years old) and reserve wines from a solera system. I tasted the wine as a Brut with Clouet's German importer in Bremen. You shouldn't drink it too early, as it would be a waste of its talents.

The fruit and presence of this wine seems to call for duck with raspberries.

This lively Pet Nat is expressive and bright. We liken Pet Nat to a "farmer's Champaign," because the second fermentation has occured in the bottle. However, it is a bit rustic, because Pet Nat is not disgorged from the lees. This Pet Nat is made from a blend of Muscat and Vignoles; it accentuates tropical fruits like guava and pineapple. The finish hinges on ripe pear expression, while the fine lees provide texture and weight.

With the intensity of color from Carignane, it’s now more of a “shotgun-a-beer” rosé—they begin pressing the grapes as soon as they enter the press, and that’s all that’s required to give the wine its beautiful color.

The inaugural vintage of Flycatcher consists of old vine Zinfandel from vines planted in 1963 at the Five Starr ranch in the Mokelumne River sub-AVA of Lodi, steeply-sloped Petite Sirah and aromatic, earthy Merlot from a duo of unlikely vineyards in the Yorkville Highlands area of Mendocino, and some fabulous Syrah from an outcropping of volcanic tufa soil in the Carneros district of Napa. The grapes were handpicked. 3 separate components were produced, a portion of the Grenache was direct pressed in Blanc de Noir style whilst the remainder was skin fermented as a traditional red wine. The Cinsaut component underwent 24 hour skin contact before a certain volume of juice was drawn off in the traditional Saignee method. The 3 components were vinified separately, natural fermentation from the indigenous yeast was encouraged generally lasting 14 – 18 days, which was followed by malolactic fermentation. The components were aged in 228L older French oak for 6 months before blending and then allowed to mature for a further 4 months.

This light and fresh blend of Carignan and Grenache from Corbieres is a fabulous, chillable red that can almost be considered a deep rosé. The vineyards are at around 660 feet in elevation and are influenced by both the warm, humid winds of the ‘vent Marin’ that come up from the Mediterranean and the dry, cooling winds of the ‘vent Cers’ from the northwest creating ideal growing conditions for natural winemaking without any herbicides or pesticides. The Carignan sees two days of whole cluster spontaneous fermentation, then submerged in fermenting Grenache juice, pressed immediately and aged for 6 months in neutral barrique with no added sulphur. The result is a clean, balanced, crushable red with fresh cherry and strawberry flavors, dried herbal notes, and a crisp finish with dry, gentle tannins. Pair with chili con carne, lentil salads or a cheesy stuffed red pepper.
