VEGETARIAN - Canestri go by a few other names (lumache, pipe rigate) but the translation to "basket" seems to be the most accurate descriptor of these ridged beauties. They have a hollow interior larger than rigatoni, and trap the sauce inside and out. You want to eat these with the most crave-able of accompaniments, which for us is our Vodka sauce. Made from a classic slow preparation of melted sweet onions, we add a few dashes of Calabrian chile purée, vodka (the alcohol cooks out), along with crushed San Marzano tomatoes, cream, mascarpone and Lambrusco vinegar. 12oz kit serves 2 people. Red Kabocha is the variety of this squash, grown in IL. The thin, tender skin is fully edible and is a striking color - perfectly vibrant orange. Our gnocchi is made with equal parts squash and ricotta for a light, fluffy finish. There is chopped fresh sage inside that will come to life when cooked. The sauce is simple - burro e oro means “butter and gold” - gold being the tomato, or pomodoro. By browning the butter, it ties this classic sauce directly in with these fall flavors.
