Deceptively medium in body, the Oeil de Perdrix possesses striking finesse and exceptional overall balance. The Pinot Noir for this methode champenoise sparkling wine 'Sea Spray' from Sea Smoke is the result of a careful cluster selection from their estate vineyard. The grapes were gently pressed following an evening in our cold room, then transferred to stainless tanks to begin a long, cool fermentation, which was completed in once-used and neutral French oak barrels. Following six months of sur lie aging in barrel, the wine was bottle aged an additional 16 months en tirage prior to disgorging. The wine was finished with no dosage, to preserve its finesse. The nuanced nose expresses cranberries, lavender, fresh bread and lemon curd. The wine enters the palate with energetic freshness and finishes with delightful length.

Aligote Athenais de Beru, biodynamic wine, raising Aligote to the level of very fine white wine, layers of texture, freshness and richness, absolutely delicious. Athenais makes some wine under a small negoce label, not as part of the Chateau de Beru label. However, the quality of these wines is just as high as her magnificent Chablis. The Aligote is fruit sourced from a friend also working biodynamically. It is a stunning example of this grape which in the hands of some top natural growers is now showing that it can also be very fine wine, better than many Cote d’Or Chardonnay.

The wine opens with fresh peach, apricot, and honeydew amidst citrus blossom and rose water. The diversity of aromas in this vintage is astounding as the floral characteristics begin to take center stage with time in the glass along with ample fresh pear and cinnamon. The palate is lush viscous, and driven by lemon curd, the palate leans toward creaminess but with enough bright acid, green apple, and toast to bring balance and finesse. The ripeness of the vintage drives the mouthfeel as the flavors exude freshness and vibrancy, a unique combination. The Winzergenossenschaft Königschaffhausen-Kiechlinsbergen Blanc de Noirs is made from 100% Spätburgunder (Pinot Noir) made as a white wine, without skin contact, the same method as used in Champagne, but as a still wine! The grapes come from the volcanic soils of the terraced Kaiserstuhl vineyard in Baden, one of the regions top sites for Spätburgunder. The wine is fermented in stainless steel and rests on the fine lees for a few months until bottling. The resultant wine is dry, fun, fruity and floral with a complexity and refreshment unlike anything else in Baden!

Our 2023 Sauvignon Blanc has aromas of grapefruit, lime zest, white flowers, white peach, lemon grass, and orange peel. On the palate are aromas of pineapple, guava, tropical fruit, Asian pear, candied lemon, and green melon. The wine has a bright acidity and wonderful texture on the mid-palate. While the core of this wine is Sauvignon Blanc, the Musqué, Sémillon, and Viognier add a lot of floral notes and viscosity to this vintage. We captured these wonderful floral notes by fermenting each variety separately in concrete eggs, stainless steel drums, and tanks. The French oak barrels, in which 10% of the wine aged in, were very lightly toasted to preserve the delicate fruity aromas and provide a creamy texture to the mid-palate of the wine.

Michter’s US*1 Rye is surprisingly full of flavors. There is fruit, caramel and brown sugar that would not be necessarily expected, and there is the possibility that one might mistake this for a high rye bourbon. The nose is almost like a pear and cherry cobbler. The rye makes itself known more so in the finish, where the black pepper spice grows, although there are more subtle rye flavors in the nose. Due to the lower alcohol, I am left with a nice lasting warmth on the finish, rather than a “burn”.

There’s a great standard bourbon smell as soon as this ‘glugs’ out of the bottle and into your glass. It’s got some good brown sugar sweetness with a bit of butter in there, some vanilla around the edges, and just a hint of sourdough bread. Also in there is some citrus in the form of a little bit of lemon zest adding some brightness. Taking a sip, the charred oak flavors are large and in charge. There’s some charred caramel in there and a good bit of vanilla, and at times the flavors combine to muddle together and just come across as charred wood. It’s nicely sweet in the middle, with a good bit of brown sugar, sometimes a touch of that cherry pokes through, and finishes with some cinnamon spice and a light cherry flavor.
