Did you know that nearly 80% of the bowls ramen served at restaurants in Oregon are made with commercial bottle of sauces often just diluted with hot water? Implications to that is that if you are used to eating that kind of instant food you will slowly lose your ability to taste real food because the commercial lab-made sauces have a bunch of chemical flavor enhancers you cannot buy in stores. It will most likely have negative impact in your health in a long run if your food preference is heavily affected by it. We, Magokoro Ramen, are different in that we have been making our broths the "right way" by using the finest local ingredients and house-made sauces using traditional ingredients/sauces just like serious ramen shops in Japan do from day one since 2018.     Hiyashi Chuka is a brothless ramen served cold. It's available as a summer special. It's served in traditional soy vinaigrette sauce. Served with your choice of chashu, seasoned bamboo, spinach, cucumber salad, seaweed salad, grape tomato, 1/2 soft-boiled eggs*, roasted sesame seeds, red pickled ginger and thinly cut seaweed.
