100% Chardonnay from Adelaide Hills Australia The fruit was pressed to tank and the juice was allowed to settle overnight. Fermentation took place in aged barrel with elevage for 11 months on full lees with some stirring. Notes of apples and pears and honey, but this is balanced with savoury undertones and an earthiness from the clay and minerals in the sandstone. The acidity is present from the beginning but lingers nicely and is carried by a phenolic sandy texture.

The next year, fermented Moschofilero must is added to the bottled wine, creating natural sparkle and a lees-y texture. The wine is not disgorged, giving it a hazy appearance and enhancing its palate weight and texture. This entire bottling process is done by hand. Citrus, orange, and the snap of jasmine flower to the nose. To the mouth the tastes of rose and yeast are predominant.
