Hazy IPA DDH with Riwaka and Strata 7.8% A handful of hop varieties pack such appealing aromatics that brewing with them is like cheating. We named our ever-changing series of IPAs “Cheater Hops” in their honor. We are honest brewers, that’s why we can admit when we cheat! In this iteration, we doubled-down on the dankness! Riwaka (and Riwaka Cryo) brings grapefruit zest and diesel, while Strata (and Strata CGX) provide notes of orange and waft of "OG" stank.

Imperial Stout with Toasted Hazelnuts, Cacao Nibs, Vanilla Beans, and Coffee 12.0% ABV We brewed this extra-sticky Imperial Stout with three beans (coffee, vanilla, and cacao)... and it's liquid, so technically it's a three bean soup! The base is more caramel than roasty thanks to three extra-long boils (~60 hours in total). The result is as thick as pea soup, but with the flavors of a mocha hazelnut latte!

Munich Dunkel Lager 5.2% ABV The secret to delicious malty lagers is delicious malt. This one was brewed with Weyermann's® heirloom Barke® Vienna and Munich malts, plus a little dark malt for color. We hopped it lightly with German Tettnang in the kettle for balancing bitterness and an herbal lift. The flavor is loaded with toast, pumpernickel crust, and light chocolate.

DIPA with Mosaic® Pellets, Mosaic Cryo®, Mosaic YCH 701 (Oil-Enriched Extract), Mosaic DynaBoost™ (Super-Critical CO2 Extract) 8.2% ABV We brewed this one with just about every Mosaic product from Yakima Chief to express the depth and intensity of one of our favorite varieties! In addition to the usual pellets and Cryo, Dynaboost (supercritical CO2-extracted liquid added to the whirlpool), and 701 (steam-extracted liquid added right before canning)! It's the most intense expression of Mosaic we've ever created!

IPA DDH with BRU-1, Citra, and Simcoe 6.8% ABV We pulled three of our favorite hops out of a hat for this hazy IPA! Everyone knows Citra and Simcoe, but what about BRU-1? It's a relatively new variety that we previously used with great success in Mad Fermentations Vol. 20. It brings bright citrus and pineapple aromatics that provide a little magic with two of our favorite varieties!

DIPA with Orange Zest, Lime Zest, and Vanilla Beans 7.5% ABV This Double IPA was already citrusy from the hops and creamy from the oats, then we took it over-the-top with the zest of more than 100 Cara Cara oranges, punchy lime zest, plus a bunch of vanilla beans. The result is a big citrus aroma, paired with the creaminess of vanilla. Milkshake-ish, without the lactose.

German-Inspired Pilsner 5.8% ABV "Kellerbier" (cellar beer) is unfiltered and unpasteurized, often hazy, with a fresh malt and hop flavor. We hopped our version with German Saphir in the kettle and again in the fermenter (in flagrant disregard for the German Reinheitsgebot's ban on dry hopping). The herbal-citrus-spice hop character balances the grassy German Pilsner malt.

Hazy IPA DDH with Cashmere 6.3% ABV We occasionally divert a few gallons from a batch for experiments dubbed “Mad Fermentations.” Our usual goal is to manipulate the fermentation to enhance the perception of fruity hop aromatics. Sometimes the results are good, others we learn something… This recipe started as Mad Fermentations Vol 4. It was our favorite and luckily one we immediately received calls to re-brew. It’s an IPA fermented with a blend of English Ale and Hefeweizen strains, then double-dry-hopped with Cashmere. Sweeter than our typical IPAs with a tropical aroma of lemongrass and candy.

Machin Shin - 5.0% ABV Schwarzbier Tomatoes aren't native to Italy. Chile peppers don't originally come from India. Maris Otter isn't a German barley... sometimes ingredients and techniques from unexpected places are required to create the flavor we are looking for! This dark lager has a wonderful bready flavor thanks to the blend of German and English base malts, along with the espresso-like char of German roasted barley. Lagered cold for a clean background that lets the grain shine!

Rye TIPA DDH with Nelson, Nelson Cryo, Mosaic Cryo, and Riwaka 9.9% ABV We started off the "Dragon" series of hoppy rye ales in 2018. This is the biggest Dragon yet, a Triple IPA loaded with concentrated Mosaic Cryo from Oregon and Nelson Sauvin and Riwaka from New Zealand. The result is like fresh squeezed hop juice, tropical, fruity white wine, herbal dankness. The hop bitterness and malt sweetness balance with flaked rye providing a lusciously smooth body.

Chill Haze IPA DDH with Anchovy and HBC 586 7.2% ABV We wanted to feature the new fruit-forward Anchovy hop variety in a new "Chill Haze" IPA i.e., a Hazy IPA fermented cold with Lager yeast! The clean fermentation stays out of the way, allowing the Anchovy from Segal Ranch (Washington State) to express its fruity (watermelon) and pine notes. We paired it with HBC 586 which brings tropical and stonefruit notes, balancing the greener leaning. The finish is somewhere between our standard Hazy IPAs and a Cold IPA, rounded and crisp at the same time!

Pilsner Hopped with Perle 5.1% The recipe is simple: German Pilsner malt and water from Liberty Lake in the mash, Hallertau Perle in the kettle, and a malt-forward German lager strain in the tank. Some brewers say that Pilsner is the most difficult beer style to brew because it doesn't hide mistakes. We did our best! The result is grainy, grassy, and crispy. Difficult for us to brew, but easy for you to drink!

Pilsner Dry Hopped with Sterling 5.1% ABV The German Reinheitsgebot (German beer law) has been updated several times over the centuries. One of the most recent updates (2012) finally allowed dry hopping! While we brewed this Pilsner with heirloom German Pilsner malt, we dry hopped it with American-grown Sterling. Sterling is a hybrid of German, Czech, and American varieties and inherits herbal-spice from the European parentage to go with citrusy notes.

Vienna-Style Lager 5.8% ABV Few styles exemplify beer's "liquid bread" moniker as much as Vienna lager. The toasted German malts provide the same sorts of melanoidins created by the Maillard reactions of protein-sugar-heat you'd find in an artisanal loaf. Like bread there isn't much sweetness left behind after the clean lager strain and cold lagering. Like bread, freshness is key so this beer is unfiltered and unpasteurized!

English-style Brown Ale 5.7% This isn't an India Brown Ale, or a Sour Brown, or an Imperial Brown. It's just a classic Brown brewed with English Maris Otter, Chocolate, and Caramel malts. Hopped with Crystal, and fermented with our house English Ale. The result has notes of coffee ice cream, toasted bread, and orange marmalade.

Imperial Stout Brewed with Maple Syrup and with Coffee Added 12% Nothing says diner breakfast like the mingled aromas of maple syrup and freshly-roasted coffee. We added 30 gallons of dark maple syrup to make this massive Imperial Stout even more massive. The recipe has less roast and bitterness to leave room for the coffee from Vigilante Coffee Co. (Hyattsville, MD)! The maple adds woodsy-vanilla-caramel notes that dance around the warming baked good aromatics of the coffee.

Rye TIPA with Spruce Tips and Orange Zest 9.9% ABV We love Holiday Dragon, and wanted to make something similar, but less Chirstmas-y... so we foraged spruce tips! Wait? Wouldn't that make it more Chirstmas-y? Luckily the fresh spring growth of spruce trees provide a more citrusy less-resinous-pine flavor than you might imagine. We layered them with fresh orange zest to create a more vibrant, citrusy, and aromatic version of this dank Triple IPA!

West Coast Pilsner with Citra Cryo and Chinook 5.9% ABV We combined one of the original "C" hops (Chinook) with one of the more recent (Citra) for this snappy West Coast Pilsner! The clean lager fermentation allows the aroma of the hops to lead with notes of pine, orange, melon, and pineapple! It's the sort of hoppy beer we want to drink when the weather is warm: crisp drinkablility, bold hop aroma, and a fresh bready malt flavor.

Pale Ale with Peach Tea 5.6% This beer was inspired by the feeling of sitting on a front porch swing in summer, sipping peach-flavored ice tea. We leaned into the underlying peach and apricot aromatics of the hops (Vista and Southern Cross) with a delicate addition of peach-flavored tea. The tea itself adds herbal notes helping to balance the fruity aromatics. The finish balances the sweetness of the pale malt, juiciness of the hops, and richness of the tea leaves.

Kentucky Common We brewed this “Pre-Prohibition” take on an amber lager with American 6-row barley, corn, and a touch of chocolate wheat malt for color. Lightly bready with notes of honey, Corn Flakes, and a subtle balancing hop bitterness. It’s named after the Nazi-fighting archeologist from an adjacent state, who in the initial draft was going to be named “Kentucky Jones.” We assume he’d have worn a different hat…

Pale Ale with Freeze Dried Mangoes and Terpenes 6.0% ABV We're sponsoring our first Disc Golf tournament this year, Sapwood Showdown May 25-26, 2024 at Patapsco Valley State Park! We decided to rely on our brewer (and resident disc golfer) Joe for a suggestion of what style would go over well with discgolfistas, he went with the "synergistic" combination of mangoes and terpenes on a mango-forward Simcoe pale ale base. Fruity, dank, and crushable!

Hoppy Belgian-Style Pale Ale 6.4% ABV The idea for this beer has changed a few times, but we got there eventually! It's a hoppier take on a Belgian beer, but it isn't a Belgian IPA. It has a little extra body to support the hops from wheat and oats. Then we added a base of citrusy-herbal Saphir hops in the whirlpool. Followed by some wonderfully fruity-spicy notes from a Belgian strain. Finally a light dry hopping with American Amarillo for stone-fruit notes.

Irish Dry Stout 4.5% ABV Michael's Great-Grandmother immigrated to America from Ireland in the 1880s. We took inspiration for this Irish stout from the ingredients used in recipes from around that time: Pale Ale, Amber, and Black malts. These are more flavorful (and expensive) than the unmalted barley that comprises a large portion of most Irish stout recipes today. However, we kept the modern balance of restrained alcohol, invitingly dry-roasty finish, and creamy mouthfeel!

This one is whirlpool-hopped exclusively with orange-tinged East Kent Goldings from England.

This iteration of our "smoothie" sour is modeled after a bowl of vanilla yogurt with coconut, strawberries, bananas, and toasted hemp seeds! The tangy base with vanilla beans stands in for the yogurt, along with coconut cream, and strawberry and banana purees!

Spelt Pale Ale Hopped with Southern Cross and Vista 5.6% We swapped the wheat malt in our usual pale ale recipe for spelt. It's a high-protein cousin to wheat that adds body and a slightly rustic graininess. We leaned into that with Southern Cross, a New Zealand variety with apricot and spicy pine. Balanced by the tropical fruit and peach of American Vista.

Barrel-Aged Funky Ale with Citra® Cryo® 7.1% ABV We refilled the barrels that held Measure Twice with our all-Citra pale ale Rings of Light! The microbes went to work transforming the hop compounds into unique pineapple, orange and funky aromatics. After 9 months of aging a lightly-tart, uniquely-fruity beer emerged. We gave it a dry hop dose of Citra Cryo right before packaging to ensure a unique aroma that blends the best of mixed-ferms and IPAs!

Pale Sour Aged in Gin Barrels with Dried Limes and Quinine 6.8% ABV This beer is a blend of two beers aged in gin barrels from McClintock Distilling (Frederick, MD). The older portion was a firmly acidic golden sour, while a younger beer that was more herbal and earthy. We added dried limes for a Sprite®-like finish and a quinine extract for a faint woodsy-earthiness and balancing bitterness. The flavors took inspiration from Gin & Tonic, but we weren’t trying to brew a bottled cocktail!

8.0% Dark Saisons (one bottle each: Clean, Imperial Suburban Brett, Wyeast Brett Lambicus, and a "House" culture) Each of the bottles in this set started as the same dark saison. We split it into kegs with different microflora and allowed them to diverge for year. Try them side-by-side to see how much the choice of wild yeast and lactic acid bacteria alters the resulting beer!

Dark Sour Ale Aged in Wine Barrels with Cascara and Coffee 5.8% ABV In 2008 Mike and his friend Alex Howe began a tradition of homebrewing Dark Funky Saisons each fall. The recipe and results evolving and revolving over a decade. Elliptical Orbit 2023 leans into Alex's other favorite beverage, coffee! It was refermented with cascara (the fruit of the coffee tree) and then infused with a small amount of Geisha coffee that Alex roasted just for us! This is the fifth entry in a renewed tradition!

Pale Sour Ale Aged in Wine Barrel with Second-Use Chardonnay Grapes, Raspberries, Cherries, and Nectarines 5.0% ABV This beer went on a journey without leaving our brewery! It started out going onto the Chardonnay grapes originally from Field Learning. Then into two well used wine barrels. Next it went onto the cherries and raspberries originally from Jammiest Bit. Then a final infusion on the nectarines from Polite Company. SInce all of the fruit was "lightly used" it has subtle notes of vinous, berry, and stonefruit without any of them dominating!

Three-Year-Blend of Barrel-Aged Pale Sour Ales 5.3% ABV Each year a tree creates a new layer of sapwood under its bark, a growth ring, recording the tree’s life. So too we add new oak barrels to our sour program each year, slowly expanding. This blend is a cross-section, with barrels selected from those we filled in 2020-2022. The younger barrels provide stone fruit and mineral vibrancy while the older ones bring oaky depth and earthiness.

Guava Gose 5.2% ABV We love our base gose, Salzig (German for “salty”). It’s a traditional mixed-fermentation with Lactobacillus and Brettanomyces. Subtle, tart, and citrusy. This version with a massive 700 lbs of pink guava is anything but traditional or subtle. The fruit adds an intense tropical flavor and increased acidity.

Wild Ale with Lemon Verbena and Pineapple Sage 5.3% ABV Fruit brings aromatics, but also sugars, acids, and other compounds that alter a beer both in predictable and unpredictable ways. These two barrels already had a beautiful tart balance that we didn’t want to disrupt, so we infused them with homegrown herbs: Pineapple Sage (from Ken) and Lemon Verbena (from Mike). The result is a beautiful melding of lemondrop, hay, herbs, and oak.

Barrel-Aged Rice Ale with Sauvignon Blanc Grape Powder, Elderflowers, and Muscadine Grapes 5.6% ABV We filled two wine barrels with Wedding SZN (the rice ale we brewed at Olde Mother Brewing). Inoculated with our house culture, they developed light acidity and enhanced fruitiness. To compliment the Phantasm Powder in the base, we then added 200 lbs of Muscadine grapes from South Carolina. The native grapes impart wild aromatics of tropical fruit, strawberries, and just a little diesel-y-funk!

Pale Sour Ale Aged in Wine Barrels with Cherries and Raspberries 5.2% ABV Cherries and raspberries are a perfect pair. The jamminess of the raspberries balances the brightness of the cherries. We were heavy-handed with the fruit on this one with 150 lbs of sour cherries from Baugher’s Orchard (Westminster, MD) and 150 lbs of red raspberries from Twin Springs Fruit Farm (Orrtanna, PA). We selected two pale sours aged in red wine barrels (Malbec and Pinot Noir) to mirror the flavors of the fruit. We get notes of raspberry jam, cherry pie, almonds, and lemons!

Barrel-Aged Wild Ale with Barbera Grapes and Sour Cherries Bottle Release 2/2/23 - $16/500mL It's pretty absurd that we get to support ourselves by brewing sour beer! We got together with our friend Jennings to blend this combination of barrels of an older-funkier "Marylandbic" and a younger-hoppier wild ale. We infused them with Barbera red wine grapes from Crow Vineyards (Kennedyville, MD) and sour cherries from Baugher's Orchard (Westminster, MD). The finished beer is tart, jammy, with just a touch of new tennis ball from the house culture!

Older Nails – Barrel-Aged Strong Sour 12.2% ABV In April 2020 we emptied two bourbon barrels of their resident Imperial Stouts and refilled them with a peculiar base beer inspired by English Stock Ale and Belgian Oud Bruin. The residual stout adds subtle roast to the aromas of fig from the malt, leather from the house culture, and vanilla from the oak. We suggest serving at 50-60°F from a snifter, to accentuate the balance of mild acidity, caramel sweetness, and red fruitiness.

Wild Ale aged in Gin Barrels with Nectarines 6.4% ABV The combination of bright stone fruit and herbal gin-barrel-aging is one of our favorite combinations! We kept the acidity low on the base beer to ensure a bright drinkable balance of juniper notes from the barrel and the honey-floral notes from Jade white nectarines (Twin Springs Fruit Farm in Orrtanna, PA). It's a beer that will help you recall summertime evenings, no matter what the weather is outside!

Pale Sour Ale Aged in Wine Barrels with Raspberries and Merlot Grapes Added 6.6% ABV To create this beer we added particularly raspberry-forward Livermore Valley Merlot grape must to a young red sour and actual raspberries to an older golden sour for additional oakiness. The combination is vibrant in terms of flavor, aroma, even color. We'd suggest drinking it soon if you want to really enjoy the raspberry, or cellaring if you'd prefer the winegrapes to be more prominent.

Ashmead’s Kernel and Gold Rush CIder aged in Cabernet Franc Wine Barrels 6.9% ABV This cider was pressed from two classic cidermaking apple varieties Gold Rush and Ashmead’s Kernel, both grown in Virginia. Our friends at Old Westminster Winery (Westminster, MD) gave us a couple Cabernet Franc barrels to age it. In addition to soft vanilla tones, the barrel also provides a beautiful berry-note to the classic “apple-forward” cider balance.

Dry Harrison Apple Cider 6.9% ABV Harrison apples were a popular American variety used for making hard cider in the years around the Revolutionary War. The variety fell out of favor and was "lost" only to be rediscovered in the 1970s. This cider was pressed from 100% Harrison apples grown in Virginia, then fermented with our house culture. We get baked apple, lemon zest, and light tropical notes. Finally we naturally-conditioned it for high carbonation!

Double-Barrel-Aged Dark Sour with Syrah Wine Grapes 8.7% ABV We wanted to create our most vinous beer yet! The fall of 2022 we blended barrels of sour red and sour black that had already aged for more than a year onto Syrah grape must. After referementing we returned the beer to fresh Syrah wine barrels for an additional five months of aging.
