"Jack sockeye are early-maturing males that spend only one year in the ocean and return from sea only a quarter the size of their typical siblings (1-lb jacks vs 5-7 lb sockeye). These small sockeye are too little for the canning and filet machines, so industry has difficulty utilizing them, despite their identical sockeye flavor and nutrition to their older siblings. I specialize in working with underutilized species, so I purchased these jack sockeye to have cut and packed by hand."

Vinbero's Verde sauce is an experimental batch made of Tomatillos and Thai Chili from Alvarez Organic Farms and seasoned with Galanga, Ginger, and other Thai Curry adjacent ingredients. It is a much spicier sauce with a creamy mouthfeel and a vegetal bouquet.
