These lamb ribs are braised over carrots, onions,celery, garlic, thyme and white wine. The ribs are cured overnight before getting braised with black pepper,caraway, coriander, salt, curing salt and red chili flakes. They get a pickled mango and cabbage slaw that gets tossed in with lemon juice, olive oil, cilantro and toasted cashew. This is a mexican soup made traditionally but with some spin to it. Here we do braised rabbit, hominy (large corn kernels), garbanzos and a pepper and tomato paste (cumin, black pepper, pasilla, fresno, tomatoes, onions, garlic, sugar, smoked paprika, cayenne and salt) this is the base of the soup what gives it the flavor for the most part. The broth is made with chicken bones and the liquid from the braised rabbit. It gets garnished with fresh cilantro, radishes, sourcream, maldon salt and a lime wedge.
