**gluten, dairy** Our Hamburger sandwich is a custom in-house blend - 40% dry aged grass fed beef from hudson valley, 40% retired dairy beef from Butter Meat Company as well as 20% fresh chuck flap also from Hudson Valley. To this we cut in 30% beef fat by weight of a mix of aged beef tallow, dairy beef tallow and beef belly. The fat is diced and salt cured lightly overnight. The burger patty is 10 ounces and broiled to Medium-Medium rare. The burger is served on our salt-brushed & sesame seeded brioche bun. The bun is buttered with our steak butter - topped with our salsa verde mayo and served with lettuce & red onion slices. The Hamburger gets the Watercress Salad sidecar. There is a choice of aged gouda and red rock. 2.00 Pueblo Viejo Tequila 0.75 lime juice 0.50 cane syrup 0.25 Cointreau Shake, strain. Large rocks glass with ice. Lime wedge. Pueblo Viejo doesn’t spend much on marketing, so it’s not a well known brand, but it’s excellent juice. It’s made at one of the oldest distilleries in Jalisco, operated by Carmen Villareal, one of the tequila industry’s legendary women, with an eye on social justice. Guests can sub out their favorite brand, but they don’t have to here.
