We’re stoked to have owner and butcher Doug Palmer of Palmer’s Quality Meats show us first hand whole hog butchery. From there we will talk about all things pig and the endless possibilities of what we can make utilizing many different cuts. For those of you who have not been yet, please be sure to check them out. They are a family owned whole animal butcher shop selling local, healthy, pasture raised meats in Neptune City, New Jersey. Dishes and techniques we may be learning could look like, but not limited to, Fried Schnitzel from the ham, Grilled Pork Chops, and a Braised belly/or shoulder dish.
