They pieced together a lovely blush blend of Adelaide Hills Chardonnay, Skinsy Pinot Gris and a tiny dose of Merlot to make the most refreshing bubbly boy in the game. For over two hundred years the Dumont family has been cultivating vines in the southern Champagne region of Aube. The Dumont vineyards are dominated by Pinot Noir as it grows well in the warm climate and dense, chalky soil of the region. This is their flagship cuvée, a blend of vintages typically between two and five years old, that is less aggressive and more sumptuous than those from northern Champagne regions. Two years of aging on the lees provides yeasty aromas of crusty bread along with ripe apple and pear. The dry, crisp palate has beautiful richness with persistent, fine bubbles to compliment the flavors of peach and citrus zest.

Most fine Champagnes get their complexity from aging of the base wines in oak barrels and/or extended aging “on the lees” in bottle after the secondary fermentation (where the bubbles come from!). But there’s a third approach called “solera.” This week’s featured R Dumont Solera Reserve Brut is a good example: After harvesting their 1991 vintage grapes, the Dumont family filled a single stainless steel cask with their remarkable Chardonnay. Each year, they took about a third of the wine out and used it in their NV Brut, replacing what they took with Chardonnay wine from that year’s vintage. After ten years, they released their first solera, and the release we’re featuring was pulled in early 2016, so it includes wines from 25 vintages!Notes of jasmine, green tea, almond, brioche, and quince entice. A must-try for every Champagne enthusiast.

BLEND | 60% Pinot Meunier, 30% Pinot Noir & 10% Chardonnay VINEYARDS | Eclats de Meulière means “burst of millstone” recalling the nature of soils which are calcareous clay with little flints and millstones. Vineyards are located on the 5.7 ha in the Petit Morin Valley at the south-west of Côte des Blancs. WINEMAKING | Traditional wild yeast fermentation in stainless steel and foudre (20%) followed by lees aging with bâtonnage for six months. Secondary fermentation and further aging on the lees for 30 months. Disgorged in January 2018, the NV Extra Brut Éclats de Meulière opens in the glass with a gently reductive nose of smoky orchard fruit, wheat toast and iodine. On the palate, it's medium to full-bodied, bright and incisive, with a ripe core of fruit underpinned by a tangy spine of acidity, concluding with a saline, mouthwatering finish.

Truly a found treasure, this tiny family domain was founded in 1964 by Michel and Marie-Claude Jeaunaux, now run by husband and wife Cyril & Clémence Jeaunaux-Robin. The estate is only 5.7 hectares (the family’s backyard) in the village of Talus-Saint-Prix in La Vallée du Petit Morin. Vines are approximately 40 years of age (considered ancient by Champagne standards) on flint-rich, silex soil. The farming is meticulous, currently undergoing organic certification and practicing biodynamic viticulture. BLEND | 60% Pinot Meunier, 30% Pinot Noir & 10% Chardonnay VINEYARDS | “Le Talus de Saint Prix” means “the slope of Saint Prix” referring to the slopes on which the vineyards are planted in the village of Saint Prix. WINEMAKING | Traditional wild yeast fermentation in stainless steel followed by lees aging in stainless and 20% barrel with bâtonnage for six months. Secondary fermentation and further aging on the lees for 42 months.

La Vallée du Petit Morin. The estate is only 5.7 hectares. Vines are approximately 40 years of age on flint-rich, silex soil. Organic certified,practicing biodynamic. 60% Pinot Meunier, 30% Pinot Noir & 10% Chardonnay. “The underside of the hut” is a plot where the Pinot Meunier is harvested for the red wine that gives this cuvée its color. Vines are an average age of 45 years on calcareous clay soils. Traditional wild yeast fermentation in stainless steel followed by lees aging in stainless and 20% barrel with bâtonnage for six months. Secondary fermentation and further aging on the lees for 30 months.

We're lucky to have snagged a few bottles of this...A complex aromatic palette, with hints of walnuts and spices, this is an oxidative vin de voile wine made in the spirit of a vin jaune from the Jura. Rich and dry, this is an extremely high-class wine! An unbelievable cuvée, unique in the world... 100% Menu Pineau from vines farmed organically and planted on a flinty clay soil. The grapes are late harvested, with ultra low yields of 7 to 12 hl/ha! An unconventional approach to maturation – 120 months in barrels without ouillage, i.e. the custom of topping up the barrels regularly to compensate for the phenomenon of evaporation known as “the angels share”. When a barrel is not topped up for a long time a veil of flor develops on the surface of the wine; the flor is nourished by the wine.

A Croatian natural white wine with juicy tropical and stone fruit flavors, delicate floral and citrus notes, light acidity, easy-drinking tannins, and a medium-length finish.

The Sancerre Les Caillottes Dauny is a crisp, dry French white wine known for its citrusy flavor profile. Its rich mineral and herbal notes provide a complex taste that cut through and pair well with hearty fish dishes.

This wine is produced within the Anjou appellation but is intentionally declassified as VDF. Le Rouchefer is a single vineyard bottling from a 1.66 hectare parcel of the same name. An ample and generous Chenin, balanced by a vibrant minerality, the light maceration gives it structure. Agnès and René Mosse, along with their sons Joseph and Sylvestre, live and work in the village of St-Lambert-du-Lattay, a village in the Coteaux-du-Layon area of Anjou. Layon is a small tributary to the Loire that lazily digs its way through well exposed and drained hills of schist and sandstone. Its micro-climate allows for a long hang-time, and when the mornings are foggy in the fall, with no rain, botrytis develops easily on the Chenin grapes. Alluring and fresh, with beautiful kumquat, crisp apple and nectarine notes complemented by a glaze of honey. Shows good tension and energy through the clean finish, while a whiff of smoke, sea salt and intense minerality add range. Impressive.

This is a blend of Pinot Blanc (Weissburgunder), and Chardonnay. It’s given three days on skins for a touch of colour and texture before being pressed into foudre and some old barriques. It hits you with what is undoubtedly a Rennersistas signature, massive and lively freshness. It has great acidity, but this is totally balanced by fruit. There’s a little spice there as well, perhaps a touch of liquorice. A staff fave

Wiener Gemischter Satz is the name given to to the white field blend wines grown in the small vineyards in and around the Austrian capital. Once seen as merely 'jug wines' to be drunk at the table of the city's heurige, or wine taverns, when made by quality producers such as Zahel they're certainly something to be taken a bit more seriously. This is a blend of Grüner Veltliner, Riesling, Chardonnay, Pinot Gris, Pinot Blanc and Traminer fermented together using natural yeasts in stainless steel. It's then aged for around 8 months before bottling. It's full of fresh, tangy and ripe stone fruit aromas and flavours; there's also a touch of tropical pineapple in there as well. The fruit is well balanced by a crisp acidity and good minerality making for a really bright, zippy and enjoyable wine.

From the Charente region in southwestern France, where Cognac is made, this wine features Ugni Blanc and Colombard, which are more commonly distilled into brandy, along with Sauvignon Blanc and the rare grape Arriloba. The Brard-Blanchard family has been making Cognac for several generations, and today is run by Sophie Brard-Blanchard and is one of the few producers in the region to be certified organic. This dry white wine is fresh and aromatic, with the grapefruit and grassy character of Sauvignon Blanc but with a fuller body and a richer creamy texture.

One of the last vintages for Fekete Bela, who's approaching 90 years old. The wine is monolithic, a liquid stone, the acidity carving deep and fast channels through that stony flavor. There is really no fruit to speak of; instead, there is earth, deep, profound and lasting.

One liter of southern Italian sunshine, 'Litrotto' is a lightly skinsy blend of Verdeca, Falanghina, Marchione, and Fiano Minutolo, full of ripe yellow plum, silky citrus, and herby Mediterranean scrub. Medium-bodied and textural, with a crisp, dry, saline finish. L'Archetipo is making some of the most honest, lighter-handed wine out of Puglia these days, and this one proves the point!

This wine is produced within the Anjou appellation but is intentionally declassified as VDF. Les Bonnes Blanches is a sector of vines widely considered to be the top terroir in the area. It’s location next to the Layon River is geologically ideal for winemaking. The Mosse family intentionally harvests earlier to produce dry whites. The soils are composed of shallow decomposing schist and quartz on schist rock, so the roots of the vineyards' 40 year old vines can get very deep, providing an unparalleled level of minerality in the wine. Grapes are slow-pressed, fermented and aged in old Burgundian barrels. Minimal sulfur added at bottling. Rich and textured, with notes of ripe apricots and pears, with a touch of wax and white flower aromas.

This Kermit Lynch producer is basically crafting declassified Chateau Chalon! Such a tiny estate, and they make only about 1000 cases annually, bottling each wine by hand, without fining or filtration. These are crowd-pleasing wines that are already quite coveted by those who’ve tried them. There’s a beautifully pristine and unmistakable Jurassic signature here. From 65 year old Chardonnay vines growing in limestone and both gray and white marl. Topped off (aka. ouillé). Among the estate’s oldest vines!

100% Romorantin; alcohol: 12.5%; grown in clay-siliceous soils; hand harvested; fermented in temperature controlled, stainless steel tanks with only native, wild yeasts; minimal use of SO2; aged 10 months in stainless steel tanks; certified Organic by ECOCERT and Biodynamic by DEMETER.Named for the Italian word for light, ‘”Lucé” celebrates the Renaissance when Romorantin grapes were highly prized and Italian fashion spread throughout the world. Golden yellow in the glass. Deep and complex aromas that begin with pronounced acacia fragrance, followed by rhubarb. A fresh and powerful mouthfeel with a straightforward attack and aromatic hazelnut notes. Finishes with balance and good length. This dry and balanced “grand vin” expresses all of the tradition and wealth of Romorantin.

Julien Pilon described himself as a landless winemaker when he started on his own in 2010. The Domaine is now a modest 5 hectares of vines, some owned, some rented, while the majority of the production is still sourced from purchased grapes. 80 per cent of Julien's production is white wines. He strives to produce white wines with flesh but with maximum freshness too. He wants to make balanced and precise whites. And he quite succeeds at this as he is producing some of the most exciting Rhone whites - wines of genuine flair and class. The wines are very much in the image of the vigneron too understated, stylish and relying more on nuance than overt power. In just a few vintages, his whites are among the best in the region. Direct pressing and settling before fermentation in old barrels for 10 months. Fragrant melon, white nectarine and jasmine on the nose. Palate follows with a very satisfying fullish mouthfeel with plenty of stone fruit, melon and a little nutmeg.

Domaine du Heron Muscadet VV Sevre et Maine Sur Lie Le Nid is a crisp white wine from the Loire Valley, renowned for its fresh minerality and hints of citrus. It pairs excellently with seafood dishes, especially oysters and grilled fish.

Elisa’s Vigno Branco is a co-fermented blend of traditional Portuguese white varieties: Encruzado (50%), Bical (20%), Cerceal (20%), Fernão Pires (5%) and Barcelo (5%), from vines up to sixty years of age, planted in the poor granite and schist soils of the Serra da Estrella foothills.The pale yellow wine has aromas of ripe apricots, chamomile, and orange blossoms, alternating with suggestions of yellow quince, key lime zest, mint, basil, and fresh nutmeg as the nose evolves in the glass.

ász Laci's "Setting Sun" is a rare blend of native varietals from Somló: Juhfark, Furmint, Sárfefér, Gohér, Járdovány, Olaszrizling and Zőldszilváni. The grapes were co-planted in a single vineyard on the western slope of Somló, and they were co-fermented. Fermentation was spontaneous with native yeasts in stainless steel tank without temperature control. The wine spent 4 months on the skins and remained on the lees until bottling. Unfiltered and unfined, with low sulfur added. Ripe guava and mango meet dried roses on the nose, with savory citrus, salt, herbs and golden apple on the palate. The volcanic terroir lends a touch of smoke to the finish.

The Tomac family has been making wine for over a century, but it wasn't until 1987 that they began bottling in a modern style. In 1996, their Chardonnay gained international attention with recognition at the prestigious Chardonnay du Monde in France, followed by an award in Paris in 1997 for their Tomac Classic sparkling wine. Over the years, they’ve earned many accolades, but their commitment to traditional winemaking has never wavered. In 2006, they took their craft to the next level by embracing fully organic practices and adopting amphora winemaking, using clay vessels imported from Georgia. Marany challenges the common misconceptions about amber wines—it’s neither overly sweet nor vinegary. This wine glides effortlessly across the palate, offering a vibrant array of flavors like fruit tea, dried apricots, blood oranges, grapefruit, and a touch of dry ginger. It’s energetic and full of life

Jean-Yves Péron is a young artisan patiently reviving ancient, almost forgotten high-altitude vineyards in the French Alps, near Albertville. After studying oenology in Bordeaux, he trained with natural winemakers Thierry Allemand and Jean-Louis Grippat in the Rhône Valley and Bruno Schueller in Alsace. Started in 2004, he works with multiple steeply terraced micro-parcels (3 hectares total) of 115-30 year old Jacquere and Mondeuse vines, planted to friable mica-schist soils; his oldest parcels were planted in 1893, and have not seen phylloxera. Organic farming, indigenous yeasts, non-interventionist winemaking, avoidance of filtering and fining and use of little or no sulphur make these natural wines of the first rank. Wine made from 100% Jacquere grapes from a small plot composed mainly of limestone soils. Spontaneous fermentation, 2-week maceration on skins and maturation in used oak barrels for 12 months.

All grapes are dry-farmed. None of the vineyards are irrigated. All grapes are harvested manually.

This is the second generation family now running this farm. In addition to wine they also raise their own livestock, grains, produce and wild insecto colonies including bees! The pride of the farm is their herd of Angus cattle that are featured on their labels. Pinot Noir from sandy loam and rocky vineyards. The vines are over 35 years in age. After hand-harvesting the grapes, the fruit is fermented carbonically with indigenous yeasts. After fermentation, further aging took place in concrete eggs.

50% Syrah 10% Cab. Sauvignon 20% Grenache Noir&Blanc 20% Carignan 3 weeks of maceration, 1 year of aging in old barrel.

This 100% Mavrud wine from grapes that are harvested entirely by hand and then left to dry out and raisin-ate for two months. This is a similar method used for Amarone wines in Italy (apasimento method). The wines are then fermented and matured for 2 months in oak. After that they are aged in glass demi-johns (large jars) some some slight oxidative notes. The result is a deeply concentrated, dark fruited and intensely structured wine. Something truly special.

Ampeleia "Unlitro" Costa Toscana is an Italian red wine that comes in a one-liter bottle. It's known for its vibrant and easy-drinking style, perfect for a casual dinner.

100% Nebbiolo from Starderi, from the northernmost commune of Neive: a small parcel of 40 year-old vines Olek is lucky enough to rent from an older couple who can no longer tend its steep slopes. Fermented in concrete with two months on the skins (submerged cap), then pressed off and moved to large botti for longer élevage (usually two years). Unfined, unfiltered, with moderate amounts of SO2 (10-20ppm max) added just before bottling. The soils in Starderi are a little softer, more clay, less intense marl; the site is also less exposed than elsewhere in the region. As a result this is a wine that’s expressive in its youth, with refreshing acidity and gentler tannins. Don’t let its aromatic openness fool you, though: it has a long life ahead.

A new red blend for Jolie-Laide coming from a unique spread of vineyards and varieties dotted around California - 38% Valdiguie, 33% Mourvedre, 17% Grenache, 12% other (Cab Franc, Syrah, Carignan, Petite Verdot).Glou d’ Etat is a light red wine made in a fun and irreverent style, inspired by many of their favorite European wines. The wine is made with carbonic maceration, before being foot-crushed and left to complete fermentation with whole clusters, creating a lighter drinking style with fresh aromatics and a lower tannin profile. Yum!

A fresher, lighter styled Nero D'Avola. Delicious, with notes of red fruits, black cherry pie, baking spices and subtle earthiness. Medium tannin and refreshing acidity give a balanced palate. A great expression of the terroir and a great value!

From a 0.24 ha parcel in the village of Ladoix Planted in 1979 Grown on deep clay and limestone De-stemmed Indigenous yeast Aged in older barrels for 12 months + 3 months in stainless steel This wine offers a brambly fruit nose dominated by wild strawberry, accented by a touch of licorice and white-peppercorn aromas. The palate is quite silky, showcasing ripe strawberry and black-cherry flavors that linger through the finish. Tannins integrate well, beautifully framing ripe red fruit. This is perfect for those looking to explore Bourgogne now.

Luigi Tecce's Satyricon is made from 100% Aglianico from the Irpinia Campi Taurasini appellation. The vines average 25 years of age and are hand harvested as late as November. All grapes are fermented with native yeasts for 30 days in stainless steel tanks and raised for 12 months in 50 hectoliter botti, 10 months in stainless steel, and 6 months in bottle. The wine pours an opaque purple with aromas of sour black fruit, spice and earth. On the palate, floral flavors develop to support the dominating dark fruit and spice. This is a big and deep wine with a viscous texture, firm tannins and lots of fresh acidity.

100% Teroldego. Granato is the historic flagship of Foradori, the wine that put the Teroldego grape and Foradori on the international wine map. Elisabetta first made and bottled it in 1986. Granato comes from 3 parcels across 4 hectares of the oldest estate vines, on the most gravelly of the alluvial, Dolomitic limestone soils. The vines were planted from 1938 to 1956 in pergola; this old and genetically diverse material is the source of all cuttings for replantings here. The farming is certified-biodynamic and the harvest by hand. The bunches are partly destemmed and partly left in whole clusters; fermentation is spontaneous with indigenous yeasts and without sulfur in open wooden vats. It is bottled without fining or filtering and its only small dose of sulfur and aged for another year.

The 2023 Microcósmico Garnacha was produced with grapes from older vines grown on slopes with slate soils at 650 to 700 meters in altitude in the village of Jarque in the IGP Valdejalón.
