DBS stands for Delivery Boy Special. The delivery boy was our guy Eric Salazar who helped deliver Voula’s Greek Sweets to Rochester when Voula’s had to close due to the pandemic. People needed their baklava! Eric helped out his good friend Voula and now we collaborate with her on this beer every year. Voula makes baklava flavor for us and we add it to our honey brown and it is magically transformed into a completely different animal, Baklava DBS. $16.99/ 4x16oz cans

Bird Light (4.5%) is our American Lager. Brewed with Pilsen, Heidelberg, Carapils malts, and rice, it pours a light straw color with a bit of unfiltered haze. It opens up with notes of honey, biscuit and some white bread, followed by honeysuckle and rose water. $13.99/ 4x16oz cans

When our friends at MAG approached us about brewing a beer to celebrate the M&T Bank Clothesline Art & Fine Craft Festival, it was an absolute no-brainer. Leggo my Dekko indeed. As far back as I can remember, there was a good chance when I opened the fridge at my parents' house, I would see a partial sixer of Michelob AmberBock. That warm red hue was so pretty when it was poured into a glass. Mom and Dad also had proper branded stemmed glassware too! Dekko is us recreating that storied beer from St. Louis. Originally, Dekko was a nuttier craft beer-ish version, but as we are getting better at brewing, we are getting closer to the OG AmberBock. Notice a touch of sweetness as you take a sip. I think this is the best Dekko we’ve ever made.

As we continue to roll thru harvest season beer, we have come to Do Up, our beloved Honey Brown Ale. Like all of our harvest season beers, malt comes from Monroe County and is malted in East Bloomfield at Murmuration. Hops came from Pederson Family Farm in Stanley, NY just outside of Canandaigua and Skaneateles Hop Farm in Skaneateles. For the honey, we had to go alllll the way up to the roof. Nick Lord, Lord of the Bees, our beekeeper, and current head brewer at the newly opened Wheel Works in Shortsville, harvested over 200lbs of honey from our three hives. The overwhelming majority of the honey was added to Do Up. What you will find when you drink do up, is a dry brown ale, with undertones of honey, balanced w/ bitterness from a healthy dose of local Willamette and Comet hops. To “do up brown” is old timey slang meaning to do something completely, thoroughly, or to absolute perfection. A proper name for a proper beer. $16.99/ 4x16oz cans

Fields and Fen is a double decocted Fresh Hop Lager. Decoction is the process by which we remove a portion of the mash, the water/grain mixture at the beginning of the brewing process, and boil it for 20 mins or so, then return it to the rest of the mash raising the overall temperature of the mash. This generates complex malt flavors and adds depth to our lager beers. In addition to a double decoction, we use local malt, grown right here in Monroe County and malted by our friends at Murmuration in E. Bloomfield and Willamette hops come from Skaneateles Hop Farm. $14.99/ 4x16oz cans

Flightless is a classic non-alcoholic lager that is light, crisp, and refreshing. Its bready malt character is balanced by the herbal, floral, and lightly spicy notes of Perle and Hallertau Mittelfrüh hops. This one is only 54 calories and is crushable. $11.99 / 6-pack of 12oz cans

Four Pedals is made with barley malt grown in the Ereclea region of Italy, not far from Lake Como, and moderately hopped with Contessa and Lemondrop hops from Washington State, then dry hopped with the same hops after fermentation. We used to make PED with Italian plums. Plum trees produce flowers that have four petals. This got lost in translation when we relayed the beer’s info to Chad, the artist. Chad heard Four Pedals and came up with a badass art that included a 4 bike pedals as leaves on the stem of a flower. There are also flowers with 4 petals on them too!  The plums became hard to get after a couple years of difficult harvest, so we pivoted to a hop forward, unfiltered pilsner... Jamais Vu (6.2%) is a White IPA. You'll find it oddly familiar yet extraordinarily mysterious. We fermented Jamais Vu with the yeast we use for our Belgian White, Infinite Cosmos, and hops we use for an IPA (Citra, Amarillo and Cascade). It has herbal aromas accentuated by the addition of orange peel, coriander, sage, and lemongrass.

Marzen is an Octoberfest-style Amber Lager. This beer embodies Bavarian traditions of rich, malty, lager, brewed in spring, barrel-fermented, and lagered to perfection to finish the summer and welcome in autumn. Marzen has aromas of biscuit with graham cracker, honey, and pie crust, with oak, honeysuckle, and nutty notes. Marzen is can-conditioned. $16.99/ 4x12 oz cans

Would we even be a WNY Craft Brewery without putting out a Bills beer? Doubt it. Last year, Table Beer joined Circle the Wagons, Pils Mafia, Right Here Right Now, A Little Bit Lager Now in the Bills Beer Coolers at Wegmans and it was a hit. Table beer is a blend of BLT:COL at a ratio of 19:1. Its listed as a lager and the can label gives a nod to the Belgian thread. This is the first of two runs of Table beer we will do for the upcoming season. We are releasing this run before training camp, which starts next week.
