The 2018 edition of barrel fermented Grande Réserve has acquired plenty of nuances during its additional fermentation and maturing in oak barrels and former whisky barrels, 34% French Oak, 41% American Oak, 25% whisky. It is an intense brown ale, with bright glints and creamy foam. On the nose, the character of Chimay Grande Réserve combines perfectly with the woody notes and delicate hints of conference pears as well as plums from the whisky barrels. On the palate the barrel-aging provides bread crust, roasting and smoky aromas, enhanced by a touch of honey and vanilla. 10.5% ABV

DUBBEL Chimay Premiere Scourmont Abbey, Hainaut, Belgium Premiere was the first beer produced by Cimay, and has been brewed since 1862. A hallmark of its style, this Belgian dubbel is ruby in color, rich, deep, and malty. Bruxellensis is refermented for several months with a wild Brettanomyces yeast originated in Brussels. Mont des Cats Trappiste Ambree (ABV 7.6%) is brewed for the Abbey of Mont des Cats by the monks of Scourmont Abbey. It was developed independently from the Chimay range, but it has the distinctive Chimay yeast character, in both the aroma and taste. Mont Des Cats (Abbaye Sainte-Marie-du-Mont) is a Trappist Abbey in Godewaersvelde in Northern France, near the Belgian border (French Flanders). The name has nothing to do with cats, but is derived from the name of a Germanic tribe known as Chatti. The abbey was established in 1826 on the site of a earlier monastery which existed from 1650 to 1792. Mont des Cats cheese has been produced by the monks since 1890 with the milk of local farms. Like other Trappists, they produce a Trappist ale to help support the abbey. 7.6%

Cantillon Kriek 100% Lambic is a traditional kriek lambic. The fruit is a Morello (variety: Kelleris) organic sour cherry imported from Turkey with 200g added per liter of lambic. The fruiting process for Kriek 100% Lambic consists of taking pre-frozen cherries and placing them whole in stainless steel tanks with two-year old lambic for a maceration period of 1-2 months. It is then transferred to a stainless steel bottling tank until it is ready to be bottled. A quantity of young lambic is added before bottling to obtain a secondary fermentation in the bottle. A flagship beer, Cantillon Kriek is one of the most common bottlings to find.

After the blend was made, it was further fermented in a stainless steel tank. Upon bottling, a small amount more of maple syrup was added to cause secondary fermentation in the bottle. 10% ABV!
