BELGIAN DARK STRONG ALE Chimay Grande Reserve Baileux, Belgium Originally released as a Special Holiday beer, the “Capsule Bleue” became available in 1956. DUBBEL Chimay Premiere Scourmont Abbey, Hainaut, Belgium Premiere was the first beer produced by Cimay, and has been brewed since 1862. A hallmark of its style, this Belgian dubbel is ruby in color, rich, deep, and malty. It has notes of toffee and ripe fruit, with notes of minerality and smooth bitterness, which round out its deep sweetness. 7% ABV

HOPPY TRIPEL De La Senne Jambe-de-Bois Bruxelles, Belgium Jambe-de-Bois is a generously hopped Triple. Blond, very balanced, and treacherous: the alcohol is never aggressive, which makes it dangerously easy to drink. Fermentation flavours take the lead, with notes of pear and ripe banana. The hop develops floral and spicy notes (white pepper, nutmeg). Its alcohol content makes is rather round, but the absence of residual sugars leaves its finale dry and lightly bitter. 8% ABV

SAISON Fantôme Pissenlit Soy, Belgium "Fantôme and some cohorts get busy every spring picking bushels of dandelions that grow in the fields around the picturesque farmhouse brewery. The yellow flowers are removed and dried in the sun, then soaked in water for a few days. The thick, dark dandelion “tea” that results is the basis for the Pissenlit, which is made also from traditional barley malt and hops. It resembles a classic saison beer – golden spritzy brew, strong and very flavorful, with a good hop bite." 8% ABV

"Fantôme del Rey — farmhouse ale brewed with Belgian candi sugar, coriander, black peppercorns, & truffle honey in collaboration with Brasserie Fantôme in Soy, Belgium. We first brewed Fantôme del Rey with the legendary brewer Dany Prignon on a trip to Belgium in 2014. Fantôme del Rey was brewed with Hill Country well water, Texas-grown barley and wheat malt from TexMalt, organic Fuggles hops, Belgian candi sugar, coriander, and black peppercorns. It was fermented in stainless steel with our mixed culture, then re-fermented with truffle honey. "

DRY-HOPPED SAISON Brasserie Thiriez Extra Farmhouse Esquelbecq, France Thiriez Extra uses one hop varietal, a rather unusual hop grown in Kent called ‘Bramling Cross.’ The malt is from 2-row spring barley grown in France. The result has certain characteristics of an English bitter: it’s not too strong, very dry, and eminently drinkable. It makes use of Belgian yeast which gives the beer a good bit of the earthy, spicy characteristics of a saison. 5.5% ABV

FRUIT LAMBIC Lembeek, Belgium Oude Kriek Boon is one of the finest examples of the 100% spontaneous fermentation fruit-Lambic style. 400 g of wild cherries per litre are fermented together with a blend of young and old Boon Lambic that has been aged in oak casks.his Schaarbeekse cherry is a variety tart-acidic cherry which was unique to the Lambic Region that was always used for Kriek. The supply decreased substantially over the years and became less common for use in fruit lambic. This lambic is unsweetened, unfiltered, unpasteurized and has no artificial flavorings, preservatives or colorings added. 6.5% abv

"De Cam is still one of the smallest lambic blenders in Belgium, receiving its lambic from Boon, Girardin and Lindemans. The blendery located in Gooik is also a member of HORAL. Most of the barrels used at De Cam are former 1000 liter Pilsner Urquell casks. Karel, the blender, was trained by the legendary Armand and Gaston Debelder at Drie Fonteinen. For the Oude Geuze, young lambic, with a minimum maturation of one year, and old lambic, with a minimum of two years maturation, are mixed according to the taste of the “Geuzesteker”. The weighted average age of this fruit blend is almost 22 months. The final proportion of fruit used is 385 grams of plums per litre of Pruim." 7.7% ABV

For the last two summer seasons, unfortunately, peach harvest was almost non-existing with Ludo Rosseels, the last peach grower of importance in Belgium. Luckily, he also has some plum trees that we are fortunate to be able to harvest from. Last summer, we were able to harvest about 250 kilos of Sultana plums from his fields. We macerated these on an ex-Bordeaux barrel with young lambik for five and a half months. We blended with some jonge lambik prior to bottling. This way, we used lambikken from four different barrels and four different brews. The final fruit intensity is at 500 grams of plums per litre. 100% 3 Fonteinen.

For this Pruim Speling, we co-macerated two different plum varieties from Wijndomein Hoenshof, Conducta and Opal. A small 1000L toasted foeder from Garbellotto was freed up to macerate the plums, stone and all, for almost five months on two different young lambics. 7.9% ABV

Gueuzérable is made from the fermentation of organic maple syrup from Québec in a blend of 1-, 2- and 3-year old lambics in the same blend ratio as Gueuze Tilquin à l'Ancienne. After the blend was made, it was further fermented in a stainless steel tank. Upon bottling, a small amount more of maple syrup was added to cause secondary fermentation in the bottle. 10% ABV!
