Floraison 2023 (Pomace)
Floraison, with Petit Manseng, sat on Pomace for roughly 5 months, bottled in June of 2022, and has been conditioning in its final clear glass 750ml vessel ever since. On the aroma we notice a slight lactic funk, grape stem and seed, and cucumber skin. We taste a bright lemon zest, watermelon rind, green pineapple, and delicate peach skin. 6.5% ABV

Floraison 2023 (Whole Grape)
Floraison, with whole Petit Manseng grapes, is much brighter in color and lacks the hazy hue found in the Pomace variant. This was a fun beer for us to trial out a process called carbonic maceration; a technique used much more often in wine making. This process allows the grapes to continue fermentation for on or about three weeks, completely on their own, in a low oxygen environment. After this, we sent Saison barrels into stainless to condition atop said grapes for several months. Then, as always, we bottled the beer in March 2022 and have let it condition ever since, now presenting funky lactic notes along with cucumber, and dried pineapple. We also notice a profile of sage, Asian pear, white pepper, and chardonnay wine funk.

Maypop
This blend consists of four different saison threads laid to rest in a mix of red wine and chardonnay barrels for roughly 7 months. Once we transferred the barrels into stainless steel, we then dry hopped it with lemondrop for 3 months. Lemondrop is usually used in pale ales and IPAs, so it’s always intriguing to see how the different hops we use will act in these mixed culture saisons. Bottle conditioning since October of 2022, we get impressions of lemon-lime soda, peach skin, dill flower, sage, alencia orange, lavender and watermelon rind. Each sip is bright and juicy, with a medium low acidity.

Sundrop
Introducing the newest addition to our Virginia Flower Saison series, Sundrop. This mixed culture blend consists of two very different process driven batches blended together for the resultant bottle conditioned beer before you. One is a saison, with its grist comprised of Ephiphany pils, spelt, and triticale was brewed in March of 2020. The second, was a coolship lager brewed in December 2022 with Weyermann pils and rye. We transferred the blend into stainless steel and then dry hopped it with Centennial for three months. Centennial is a hop we’ve selected for years and utilize often in our IPAs where we notice lots of grapefruit, sweet candy, fruity pebbles and a touch of fresh grass. We get impressions of tart pineapple, dill flower, cheese funk, cedar, dark plum, cantaloupe rind, and lemon juice. The beer finishes with an herbal sage, black pepper, medium-low acidity and a slight salinity. 4.5% ABV

Off the Beaten Path: Pink Lemons Mixed Fermentation Lager
This batch, featuring a grist of pils and flaked rye, was opened fermented in our coolship with our house lager strain and then transferred into red wine barrels with our house mixed culture where they’ve rested since December of 2021. Once the final barrels of the blend were selected, it was transferred to stainless steel with freshly juiced and zested pink lemons from our friends @yuzu_lemons (Bhumi Growers) where it conditioned for 3 months before being primed and bottled. The bottle conditioning took roughly a full year to find the desired carbonation and cohesion we look for. This beer displays lower levels of acidity with notes of green skittles, eucalyptus, jasmine, pine needle, lemon-lime soda, and finishes with subtle salinity, sage, and grapefruit zest bitterness. Incredibly drinkable yet plenty interesting enough. 5.1% ABV

Summer Jetlag
Summer Jetlag, the next in our series of Barrel Aged English Barleywines, makes its long-awaited return. This version rested in both apple brandy and bourbon barrels for roughly 2 years. From there, it was transferred onto second use Madagascar Vanilla Beans from this year's batch of Less Than Alone, to add a subtle, baseline vanilla character. After time on vanilla, the blend was transferred to condition on a measured amount of in-house, organic toasted coconut. We believe strongly in allowing these beers to rest and meld together over the course of several weeks at cooler temps. The beer pours a deep, mahogany with a fleeting khaki brown head. We perceive notes of hazelnut, spiced rum raisin, tootsie roll, milk chocolate, apple brandy, Dr. Pepper syrup, Almond Joy, maraschino cherries and sweet cedar. This a beer destined for slow sipping after dinner, either to help us all forget about the unrelenting heat, or to embrace the cooler temps of Fall and Winter ahead.

Oak-Aged Bohem
Our once yearly brewed, forever decocted Czech style Anniversary pale lager was laid to rest within our lager-only red wine barrels. After several months and careful evaluation, the excruciatingly small batch size of just a few barrels was sent to stainless for slow carbonation and general mellowing. Adding an even further layer of process to arguably one of the most pain in the ass beers we brew was still worth it. We find impressions of slight minerality, honeydew, sweet malt, cream soda, water crackers and a drying tannic finish.

Helles Chrome
Our Helles, brewed with a decidedly measured amount of restraint, and built for consumption returns today. Formulated from a single decocted grist of the most delicate Epiphany Pilsner malt, and cold conditioned for weeks on end, we find impressions of fresh Hawaiian style sweet honey bread, soft floral noble hop bitterness, and culminating in a moderately bitter cleansing, tight lager finish. 4.8% ABV

Tiny Pils Pilsner
An all-time staff favorite, our little pils makes a swift return in cans and on draft. As if gorgeously pale lager couldn’t possibly get any more approachable or enjoyable, here it is. Easy on the ABV, but heavy on the heart, this one leans into the Saphir hop varietal. We notice white floral blossom, ciabatta bread, fresh cut grass, raw clover honey like malt depth, and a cleansing minerality. An absolute staple around these parts, this beer always feels like home. 3.8% ABV
Mosaic Triangles IPA
Mosaic Triangles makes its return for the end of summer. Hopped exclusively and heavily with one of our favorite varietals - Mosaic. This beer, and all of the Triangles beers, are full on expressions of hop character usually derived from one particular cultivar and our expressive house ale strain. Utilizing Mosaic in the whirpool, and extensive dry hopping, we note dank grass, orange creamsicle, grapefruit pith, black currant, and fresh out of the bag hop resin. 6% ABV

Falcon Smash IPA
Our flagship IPA. Dank hop character from dry hop of Falconer's Flight, and a proprietary blend of rotating hop varietals. Fermented with our house ale strain.

Tropical Falcon IPA
fter an incredible debut, Tropical Falcon returns. The base beer, as we’re certain you know by now if you’re reading this far, has always been about the balance of dank to bright, fruit to pine, and hop expression to overall balance. These variants allow us the opportunity to lean heavier into any one of Falcon’s characteristics. To that end, we notice impressions of tiki bar style pina colada, candied pineapple juice, ripe mandarin orange, and mango peach stone fruit softness. 7% ABV
