We make this special beer with a selection of Lambic beers from our foeders with the highest level of fermentation. This means that almost all fermentable sugars in those oak barrels have been fermented. Our Black Label then matures for at least another year in our cellars before it is allowed to leave the brewery. The very high level of fermentation makes Oude Geuze Boon Black Label extra dry.     Porter, 5.7%. Brett Porter is inspired by the ancient London Porters, superstar beers of the 1800s preserved in giant wooden barrels in which Brettanomyces yeasts would develop. Our Porter is not barrel-aged, but rather co-fermented with our house Brettanomyces, and brewed with magnificent special English malts. Black with a ruby accent. Foam is dark beige, fine and persistent. The Brettanomyces are well present in the nose and add a winy character with hints of ripe cherries, as an old kirsh, and a bit of leather.     Trappist brewed Belgian quadruple, 11.3%. Dominant impressions of latte coffee with powerful chocolate aromas in the nose. The alcohol esters are enveloped with hints of autumn wood, citrus zest (orange, lemon) and freshly baked biscuits. The initial taste is sweetly sinful. Beer and chocolate trapped into one single glass, a liquid milky draught with a backbone of bitter malt. The coffee is the star here, but holding it up is a beer brewed with malted barley, oats, and wheat from Double Eagle Malt, various levels of roasted grains, and a good bit of chicory coffee!
